You're absolutely correct. Wa 和 means Japan (ancient name for the country) and gyu 牛 means cow. It's the exact same reason Korean beef is hanwoo 한우. Kobe is one of the prefectures that has award-winning wagyu beef producers. And, as you stated, there are levels of wagyu, with A5 being the best of the categories. We made 2, one with a wagyu patty and one with another patty and you could immediately tell the difference, it was so juicy. Ill visit Japan soon and I'm really excited to try a genuine Wagyu steak to see how it compares.

This is a personal preference to have some chew to the steak, and that one was very soft and rich. There are little steak sandwiches they make which is probably a better application for something like this. It's a little like eating foie gras, too much becomes overwhelming.

Great vid Ben! Wagyu burgers are always odd to me. Wagyu meat is so rich,fatty and deep in flavour that it shouldn't really be possible to eat a double patty burger like that, it would be way too overwhelming. But maybe it's another cut though, that has less of the fat or something.

The burger would be closer to 200+ for actual A5 wagyu. I went to a wagyu burger spot and paid 25 for their standard blend which included a lower grade of wagyu but they show you the price for A5 and it’s hundreds of dollars. No way around that price point if you want true A5 …. since the cost per pound is always expensive. With that being said, it was still one of the most if not the best flavored burgers I’ve had. maybe one day I’ll go back and cough up those 200 bucks.
It’s definitely possible. First it’s in Japan, they don’t have to pay the mark up. Second, they use the scraps of the wagyu to create the minced meat for the patty. The burger is atleast 40% fat, so there’s only 60% actual meat content. Next we have to add in the culture. In Japan, burgers are cheap food. Very few Japanese will spend a lot of money buying a burger, regardless of what it’s made of, therefore this leads to such more affordable prices. They’re basically selling you scraps from cow for an insane mark up. But tbh you could be right aswell. Who knows…
