I don't find low weight capacity that much of an issue. Some of the best guns in the game (Mattock, or Cerberus Harrier) have really low weight, so you can keep power speed boost. Not having additional guns would have been a problem for solider, and kind of is for an engineer, but adept should have no problems going on without ammo
The Harrier is great on so many levels. Enough ammo to carry you through a fight, effective at both short and long range; it can effectively be the only weapon you need - so much so I even used it on an insanity vanguard playthrough as my sole weapon, it's rapid fire ripped through any enemy better than any shotgun.
If you ever run out of Mass Effect content I'd suggest jumping into the Dragon Age franchise due to most players who've played one game have played the other.
Honestly, adept for me might be my favorite class in all the mass effect games. There is something so satisfying about lifting, pushing and pulling enemies around and being able to disable shields with biotics is super OP.
The Adept kept being done dirty in the sequels. The set of skills in 3 are awfully selected and too redundant, all the cool powers that brings variety to a pure biotic character are now bonus powers and you can only pick one. Barrier, Reave and Stasis should have been default skills
I don't experience the downsides you mention in LE3, I've never needed to use guns and I can take care of armor, shields, barriers quite easily with Warp or Dark Channel primers and Shockwave or Flare detonators.
ME2 was the birthplace of biotic combo detonation, but in me2 its totally trash. only 30-40% success rate and the detonation itself is lackluster. not worth the time and effort. Adept is very strong in ME1, and the strongest in ME3....that pull sound effect dayum bro

As a soldier I usually only carry one gun, a Black Widow.

I use energy drain in mass effect 2 and 3 bonus power with the adept class to help with shields and synthetics creating a more flexible adept

Yeah adepts are only OP with a well-picked bonus power, pull and throw are redundant
I have always seen the default female Shepard as being an Adept and the male as a Soldier, but maybe that's just me
It is well known women of most species compensate their lower muscle mass with psychic abilities, i saw that in the discovery channel

The space wizard is super strong in ME1, but they definitely nerfed the class for the later games.
