My family is Inner Mongolian. Such a shame we cannot speak the language anymore. My mum grew up with Mongolian, but was discouraged to speak it outside of home so she never taught her children. Even though I am mostly Mongolian by ethnicity, I can't really call myself that as I can't speak the language, nor did I grow up with too much of the culture. (Did enjoy Mongolian milk tea every morning though).

Sain uu i love byaslag. I use to eat with bread or alone. The best from the cow or sheep. Goat byaslag is strong for me. If you haven't aaruul you can cut the milk with lemon or vinegar. I see all the people are healthy they eat less sugar. But i know that's is difficult to have fresh vegetables in the country the cold weather doesn't help but i see more vegetables like onions, garlic, cabbage, potatoes, carrots in another recipes. In India and Nepal there is Tribe called Tamang ( Tibeto-Mongol Tribe) & Gurung they prepare same kind of cheese called churpi. There are two kinds of churpi one is hard and the other is the soft one.

Even today Tamangs perform their horse riding culture. They also tame wild horses. In the month of August they celebrate Yartung festival in this festival Tamangs have show their horse riding skill.

I don't understand it. It was curdled by acid and not by rennet, but the result has texture like rennet cheese. Or at least it seems so. Cheese curdled by acid would crumble, according to my experience.
They used airag to curdle it, which isn't very acidic, but does contain bacteria and enzymes that will curdle milk, so it's actually more like a rennet set cheese.
I wish we, Mongolians could start putting some salt on our cheese during its preparation stage so that it would taste even better. The original Mongolian cheese that he is eating seems somewhat dull to me
