    I was sceptical when i tried this, ive never cooked pasta without a tomato based sauce, however the combined flavours of the bacon, rosemary and parmasan cheese is all you need.. Its very tasty, easy and quick

    Ingredients
    125 g fresh lasagne sheets
    2 rashers of smoked streaky higher-welfare bacon
    80 g button mushrooms
    2 sprigs of rosemary
    15 g Parmesan cheese
    1 free-range egg
    olive oil
    250ml of boiling water
    optional: extra virgin olive oil

    Almost perfect.... I'm italian and I like your version, but in my opinion the "Carbocrema" is better when is made just with the yolk, 2 for person, parmisan and pepper. In this case with mushrooms you can add parsely. (Sorry for my English)

    You provide a great foundation for building recepies, as I am schooled from Mamma. I am not a recepie person. We all bastardize these things based on our own likes. But I don't deviate from you much. This one I added some finely chopped leeks and that's it. I have been doing one pan's for a long time but you take it to another level.
    Great for my OCD partner who has to clean as I cook. You aren't cleaning that pan till I am done.

    It makes me sad that he has to keep saying that he knows that it isn't traditional and justify why he's doing things differently. All because of the trolls out there who stand on a high horse and gatekeep recipes and cultures. The brilliance of Jamie Oliver is not that he cooks from the age old recipe that has been used for 100 years, it's that he brings his own creativity and innovation to cooking that adds something new and exciting. He can cook the classic original, but why does he need to?
    People need to stop with their nonsense.

      I don't mind this recipe. Not at all. I will probably use it as an inspiration when I'm cooking some fast dinner. But please do not call it carbonara or mushroom carbonara. Let's say it's "carbonara style" or "carbonara inspired" recipe. It is not about gatekeeping, but about respect for me.

      Or find a second saucepan. It's not like washing up a pot that's only been used for cooking dried pasta is a chore, or actually takes any more cooking time than this method.

    I have to admit that traditional Carbonara recipe has been a little bit tricky for me to cook. I love everything about your style of cooking! I think it is such a elegant and luxurious recipe ever. Thanks Jamie, I really do appreciate it!

      Using the pan was unreliable for me. Now I'm using steam bath, works just fine, see seriouseats for complete recipe (I personally don't use any whites, just yolks and a little of pasta water)

      @@ebonfortress well you turn off the heat before putting the egg- pecorino mix in and it will be fine. For creamyness you add Pasta water. Sure if you don't look out for These things it might give scrembled eggs but I would Not really call it a difficult dish.

    Made some with sainsburys OMV pancetta and without mushrooms, crap :( that worried about the egg curdling as well I think I let it cool too long, then the cold egg just made it too cold.

    I usually have the opposite problem: Egg whites goes into Whiskey Sours and similar cocktails and I'm left with a bunch of yolks. Have to keep this dish in mind.

    The dish looks absolutely stunning and I will definitely give it a shot. What I don't like is camera work. How on earth can they make a clip that 50% of the time is out of focus so you can't see anything and the other time it's so zoomed in even the dish is asking for personal space.

It is becoming analogous with being 'cool' in school, which often was just a euphemism for unwise and ignorant. Where it differs with being 'cool' is that being on trend doesn't necessarily have any of the potential visual appeal.

      @@shivavision8223 Now i'll try to explain why in italy people gets mad when a chef (and that's the point) changes a recipe that has centuries of story behind. You can change a recipe, try new ingredients, new techniques, but at least you should know the basics of the recipe. If you ask outside from Italy, this one Jamie's made could pass as a carbonara cause almost nobody tries to do as the tradition. A fresh eggs pasta, with mashrooms, oil, rosemary, bacon in one pot could be a good pasta, but it's not carbonara if you put carbocream on top. That's it

      your usual water glass is around 200-300 ml. so you can say about 1.2 cups. just use 1 cup of water and add little water if needed I guess

    Made this yesterday and it was okay, but for me it needed a tiny bit more salt, maybe I used too little Parmesan. The rosemary did nothing so maybe it needed cooking for longer. Couldn't get fresh pasta sheets so used tagliatelle instead and it worked just as well. Next time I'll skip the rosemary and use sausage instead of bacon as someone else suggested in the comments.

    It certainly tastes good, even if it is not classic. Perhaps a small name change would avoid irritation. Let's call it "Mushroom pasta carbonara style", and everyone is happy.

    I've made this 3 days running mainly because I'd bought a bag of chopped mushrooms and smoked bacon lardons but they've all come out quite runny.
    I covered the chopped lasagne sheets with boiling water and left it to boil for a few minutes.
    I don't know if lardons and smoked bacon slices are any different but I found the carbanara too salty.
    Any ideas how I can improve it to be more like Jamie's?
