I like your structure for adaptation, though I think Ezio should just be left alone. He has had his arc.
My personal idea for the series would be to tell the story of how the Hidden Ones became the Assassin Brotherhood and adapt the historical event within the game universe.
I am actually writing my own story with this in mind. My idea revolving around a resurgent Order who is purging the Hidden Ones. Hassan-i Sabbah then must take the foundations of the Creed and develop it further into the tenets that will form the Brotherhood. He must also unite characters from various backgrounds and places to recapture Alamut in order to create a safe haven for those seeking the Creed.
Personally I don't think we need to give Ezio more attention than he already gets. Give Edward or Adewale some light. Maybe follow Arno's continued journey. Or the Fryes.
But Ezio already has alot of story.
While Ezio's story is the best for adaption, I agree that his story is already concluded and should be left alone. Personally, I want the series to be about Bayek. He is interesting as a character and his story has potential, but it didn't fully expand in Origins, may be because of the rpg setting. I want to see how he tracking and learning the identities of each of his target by himself, not because some npc just tell him who to kill. I want to see him struggle with the killing and start developing the creed word by word.
I am currently doing a creative writing undergraduate degree, so I have had some practice writing screenplays for a few years now and I hope to be able to work on something like this once I finish it this year.
Personally I would start off by writing a single pilot episode for my ideas instead of writing an entire season, in addition to being an animated TV series as opposed to live action. I would make Haytham Kenway as the protagonist of a TV series and adapt the Forsaken novel. Haytham is just such a good character that was put into a disappointing game (in my opinion) and he deserves the full spotlight instead of Connor, who I personally don't like as much, in addition to tieing in Edward Kenway into the story.
Alternatively, I would use Lydia Frye as the protagonist of this TV series set in World War 1 or even create an entirely new protagonist in a new time period, in this case an German Assassin living in the Holy Roman Empire (in what would be modern Germany) during the black death in the 14th century, who would wear assassin robes similar to Altair's iconic robes (albeit in black and silver with some leather parts). Essentially it would be a mix of AC and A Plague Tale Innocence.
Its funny i actually thought the same, theyd probably use Lydia Frye. If not her then Shao Jun could be cool too.
What i myself want them to do is
bi-release two seasons. One that finishes the juno arc (like they did for the Division); and one that the ACTUAL series will be based on. I guess they could do a separate "slot" release, but it would be great if fans could find satisfaction with what happened, and the franchise can continue with a good story on its own.

I LOVE the idea of giving callum lynch a chance to finally shine as a good character. Although, I feel like if we're gonna give callum lynch and his actor this chance at redemption with the audience, it would be so much better to do the same for Arno instead of Ezio, and continue his story, giving him his chance at being a deep and interesting character just like callum. This also works because arno is previously established to be one of callum's ancestors. But I love the video and theres some incredibly interesting ideas you've presented here!
At first I was disappointed when you said this would be an adaptation of AC2 instead of an original character/setting but this was actually really well done!
I also think if you care about historical accuracy you need a lot of time jumps between episodes because of when certain characters die or events take place
I would have episode 6 as the floating city to show we’ve moved location where Ezio interacts with the thieves and mercenaries of Venice and finishes with the flying machine assassination, episode 7 as carnivale, 8 should then be everything is permitted and ends with Ezio’s fight with Borgia and becoming an assassin, 9 should be a mix of bonfire of the vanities and getting the apple from the crypt so Ezio is returning to Florence as an older man and now an Assassin before 10 as the showdown at the Vatican
Love the inclusion of the Christina memories
As a final touch I would be disappointed if the episodes are not titled as sequences, that would be such a missed opportunity

Any attempt at an Assassin’s Creed media should leave out the animus and the modern world, that’s simply a framing device for the games and the users. Stick to the lore and storytelling the audience is there for.
Don't touch ac 1 , Ezio trilogy or colonial setting
Colonial setting was the worst one in the entire series.
