    My mother died when I was 4 years old, she was born in chihuahua Mexico 🇲🇽 so I learned only a few things from my dad, and watching you is like having my mother with me when I cook, even though you are not old enough to be my mother you are a mother to all in your amazing heritage and I would love 💕 to thank you 🙏 and your amazing way that has completely helped me with my recipes, I have the basic instinct to a lot of cooking but you have filled in a lot of holes I had no idea how to prepare many great dishes, again thank you 🙏 I know your family appreciates you your a great mom and wife.

      My grandfather was born in Chihuahua too. I recently found her channel and I just love it. Yesterday I made flour tortillas for the first time since my grandmother showed me. It brought back so many memories and made me feel like my grandmother was looking down on me smiling...and telling me to turn up the music 😄

    I’ve commented on a couple of your videos. My husband is active military and I’m working a covid unit. A couple of days ago was our first anniversary and we could not be together so we both went out and got these ingredients and made them through FaceTime.     I think your tone of voice is fine. Some TH-camrs speak so softly, you can't hear them. Some people just want to complain about something. You videos are great, I appreciate them.     I agree, when you grow up with authentic Mexican food you can’t eat restaurant food. It’s BLAND!! I grew up next door to a wonderful Chicano neighbor who loved to cook and she spoiled me with her cooking. I miss her soooo much!! Her son was my playmate and we always got hot fresh tortillas with butter for snacks and yummy food for lunch. Your recipes are so much like hers. Thank you for sharing them. I love your channel.

    I think it is absolutely critically important for SONS to learn how to cook from their Mothers. Not only that, I promise you, these will be memories they will treasure in years to come. Some of my fondest and most cherished memories are of puttering around the kitchen watching and learning from my Mother who we lost this past Oct at the age of 88. I never realized until later in life how much I gleaned from watching and doing simple things-things she patiently allowed me to screw up, then gently showing me the correct way to peel potatoes, wash rice, dice an onion, etc.

    The thing that I loved about Mexican cuisine is that it is so versatile. Meat plus cheese, tortillas, and any veggie. Grill, fry, bake. Oh yeah!!!

    Oh. My. God. This recipe has SAVED me! I live in Colorado now but grew up in Texas. The Mexican/Tex Mex food scene here in Denver is ATROCIOUS.       I add just a little brown sugar to my homemade enchiladas sauce
      Start with a table spoon and if you don’t don’t like it that sweet you can do 1/2 tbs

      You did not say what the oven temperature is. Other than that this is a very helpful video and I can’t wait to try the recipe. however I never use bouillon cubes. you can just use chicken stock instead of water and get the same affect.

My son when he was older would videotape me cooking various of our favorite meals…I lost him four years ago and still view our videos with me cooking and his voice talking to me!     I do believe your method of softening the tortillas with the oil has a two fold benefit.
    First to soften... Then also the oil keeps the enchiladas from becoming soggy later on. Bravo!

    Very similar to my mother's! And she learned from friends back in the 50's. My birthday dinner choice every year!! Her original enchiladas were shredded beef, but evolved to ground beef over the years. Our entire family loves them! Loved your wonderful video.

    I love to cook and my kids are grown 26 25 23 and they still come to my house for my homemade meals
    It’s a great feeling to know my family loves my home cooking and they would rather come to moms house to eat rather than go out to an expensive restraint

    I know this was 3yrs ago but I'm so excited cause my husband and I would love this!!! My hubby used to say he could make a mean enchilada. I feel like I can now have a little confidence and get him in the kitcen. Your children are so sweet and you are such a friendly and loving Mama. My Mom never made these but loved them. She passed in 2012 sadly.

    I've never commented personally to anyone on social media sites, but this comes from the very depths of my heart & soul: Steph, you are awesome! I watch your videos to see the different ways we can all cook, with the end results "we bless our families". When we are really blessed we have children who like to cook with us, like your little man Punky did making this video, along with his equally adorable little brother. I grew up having chorizo & eggs on Sundays homemade by my Grandpa Joe, along with his chili Colorado & green chili, also homemade tortillas, (I still make them the same way he did, just like the way you do). Very few people still cook from scratch at home, therefore failing to keep "family recipes" loved & alive, passed to future generations. I grew up this way & thankfully have children who enjoy doing the same. Unfortunately, my precious daughter was killed by an impaired driver, she loved to cook! The night before her death she called to tell us that she made BBQ ribs for her friends family & how proud she felt when everyone loved her meal, what a blessing to know I passed those skills on to her. My son who is turning 40 soon also loves to cook & whenever asked how he learned to cook so good he says "by helping & watching my Mama". I love watching your videos, keep on sister, so many people need to be reminded that they can also do the same for their families at home. Thank you & God bless you & your beautiful family!!

    Found out the guy I’m dating LOVES enchiladas but I didn’t want to use the can sauce & I’ve used your Birria recipe so I knew where to come for authentic recipes and let me tell you it was a WIN!!!     Thank you!!! My grandmother taught me how to make enchiladas. She never rolled them up. She would layer her tortillas. She grew up in southern Colorado in the San Luis Valley on my Great Grandfather’s Ranch. Every time she come to visit us in Wyoming she would make enchiladas for us. She also made a different sauce every time but, used New Mexico chili powder every time. I have no measurements until now. The sauce you made is more like the one I prefer most. Thank you. ❤️
