hi, how long can i freeze the dough? also, if i freeze the dough for a long time, will it affect the thickness of the cookie?
You can freeze for 2-3 months and it’ll not effect the thickness 🙂

Hi, jst want to ask what do u mean of pastry flour u didn't indicate in the recipes?
Cake and pastry flour more often use in cake and cookies to give it a velvety texture. If you don’t have it, you can replace it with 3 parts of plain flour and 1 part of cornstarch.

If the cookies weigh 65-70g each instead of 143-145g what time and temperature do I substitute?
Bake @375°f for 8-9 minutes. Freeze the dough balls for 5-6 minutes before baking.

I am trying to remake the Red velvet cookies with 275 grams of All purpose flour and 230 grams of Cake flour, my question is, how can I determine the correct or estimated amount of cocoa powder and red food colouring, that I need to put in this kind of recipe?
Add a few drops of food colour and mix, you can add more until you get the desired colour. You can add 3 tablespoons of cocoa powder.

I did this receipt and the cookies are spreading at the bottoms side. How should I bake them to be like yours?
Did you use cold butter and freeze the dough balls for 10-12 minutes?
@@TheChoppingBoardRecipes yes of course. I did a receipt and I let them at the fridge, then I preheated the oven about to 210c and low them to 205c and put the cookie on it fornavout 10-12 minutes. When the cookie start to cook, it melts all around it and this little layer spread and it’s a almost burn layer around the cookie.

We dont get pastry flour or cake flour in india. Any substitute for them?
You can substitute with 1 part of regular flour and 4th part of cornstarch.

so take half cup of all purpose flour, remove one tablespoon from it and add one tablespoon of cornstarch :)

Cake flour is more refined flour, you can substitute with 1 part cornstarch with 3 parts of all purpose flour.
