Cake and pastry flour more often use in cake and cookies to give it a velvety texture. If you don’t have it, you can replace it with 3 parts of plain flour and 1 part of cornstarch.

@@TheChoppingBoardRecipes yes of course. I did a receipt and I let them at the fridge, then I preheated the oven about to 210c and low them to 205c and put the cookie on it fornavout 10-12 minutes. When the cookie start to cook, it melts all around it and this little layer spread and it’s a almost burn layer around the cookie.

You can freeze for 2-3 months and it’ll not effect the thickness 🙂
If the cookies weigh 65-70g each instead of 143-145g what time and temperature do I substitute?
Bake @375°f for 8-9 minutes. Freeze the dough balls for 5-6 minutes before baking.

You can substitute with 1 part of regular flour and 4th part of cornstarch.

Add a few drops of food colour and mix, you can add more until you get the desired colour. You can add 3 tablespoons of cocoa powder.

Cake flour is more refined flour, you can substitute with 1 part cornstarch with 3 parts of all purpose flour.
