I remember when I was in Vietnam I was taking the afternoon walk and I came across this lady she was making fried bananas those are so good and I love the fried sweet potatoes but those are only one thing I wish I had with me for the fried bananas whipped cream that would have been so good I hope someday I'll get to go back to Vietnam to visit that awesome country the people are so kind there I've been to Hanoi I've been to Ho chi Minh City I was just amazed with all these people how these people haul their merchandise on the back of the motorbike like refrigerators that was amazing

Hi Beth. Very interesting way to mix the batter. The sugar liquid, can i make it ahead n refrigerate overnight ? Also, how long does the banana stay crispy?

It’s stay crispy for couple hours. The sugar liquid you can make it days in advance.

Hi Beth, my first try making your fried bananas and sweet potato....It's so yummy and crispy... i love the way you take time to make the caramel water for color and sweetened batter...but after about 30min, they became soggy...
Any suggestions on what I might've done wrong?
    Thanks in advance...
    Sylvia
