hi Beth. i make this today but it turn out crunchy at all. i follow the recipe to the T. i only test the temp of the oil with the wooden chopsticks. what is the oil temperature should be. what do you think i did wrong
Hi Beth, my first try making your fried bananas and sweet potato....It's so yummy and crispy... i love the way you take time to make the caramel water for color and sweetened batter...but after about 30min, they became soggy... Any suggestions on what I might've done wrong? Thanks in advance... Sylvia

It’s stay crispy for couple hours. The sugar liquid you can make it days in advance.
