Ingredients quantity
Big Brinjal cubes 1 nos
Cumin seed 1 tsp + 1 tsp
Mustard seed 1 tsp
Fennel seed 1 tsp
Fenugreek seed ½ tsp
Mustard oil 3-4 tbsp
Hing a pinch
Kalonji 1 tsp
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Green chilli 3-4 nos
Onion chopped 1 nos
Salt to taste
Red chilli powder 2 tsp
Turmeric powder ½ tsp
Coriander powder 2 tsp
Dry mango powder 1tsp
Garam masala 1 tsp
Apple cider vinegar 1 tsp
Coriander leaves 2 tsp
Method :
1. Heat a deep bottom , add mustard seeds , fennel seeds , fenugreek seeds and dry roast it .
2. In a blender , coarsely grind the roasted mixture , keep it aside .
3. Heat the same pan , add mustard oil , hing , cumin seed , kalonji allow it to splutter .
4. Now add ginger , garlic , green chilli and sauté it for 30 seconds on low flame .
5. Now add chopped onion allow it to cook for 3-4 mins on a slow flame .
6. Now add cube cut brinjals , salt mix it well and cook it for 6-8 mins on a low flame .
7. Once brinjal is almost cooked add red chilli powder ,turmeric powder , dry mango powder , garam masala , mix it well for about 2 mins.
8. Now add grinded masala , mix it well .
9. Cover the lid and cook it for 5 mins and sauté until oil leaves the bottom .
10. Now add apple cider vinegar , coriander leaves , mix it well .
11. Transfer it to serving bowl , garnish with coriander leaves .
12. Serve hot .

Chef Harpal Singh ji, today ( Sunday) I made this baigan sabji for lunch and served it with rotis and jeera rice. The sabji was extremely delicious- the combination of spices was unbelievably flavorful and tasty. I added 2 tablespoons of apple cider and 1 teaspoon of white vinegar and it turned out well. My husband appreciated this sabji very much and I will make it when my daughters come to visit. Thank you ji. Chef Harpal Singh ji, we love baigan/ eggplant, this is very unique recipe as I am coming across apple cider vinegar in Indian recipe. As it is easily available in all super markets, I will get it and make this recipe. Right now I have apple cider and white vinegar, don’t know if I can combine them to make apple cider vinegar. Nice recipe sir , sir please add coconut powder and peanuts and sesame seeds (Til seed's) and curry leaves in these Brinjal recipe.peanuts give proteins and coconut powder gives energy and til seed's give calcium and curry leaves are give high A - vitamin.
