  • I was using Bakkafrost Salmon back in 2014 when NoVe was open; when I tried it over 6 years ago, I was convinced it was by far, the best tasting, highest grade salmon I have ever tried. Just recently, Bakkafrost chose me to be their brand ambassador and I can't be more honored. You can try this salmon that is not only GMO and antibiotics free, the feed they use is also parasite free, something we have been stressing since I have started my channel. Fresh or frozen, their salmon is of the highest grade you can simple defrost, slice and eat raw. The best quality you have ever tried. If you're a restauranteur, serve this to your patrons; they will thank you for it. If you're in middle America and can't find quality salmon at your local marketplace, order this and enjoy the best salmon, hands down. Enjoy!

    Air frying sometimes means you need to spray oil on outside for brown color.

    • @MusicRainfield
      @MusicRainfield 3 ปีที่แล้ว +2

      Exactly. An air fryer is basically a mini convection oven with a broiler on top. I treat mine the same as if I was broiling something in my oven. A little oil goes a long way.

    We usually let the air fryer come up to temp. Then add the food and set time. The Tempura Roll looks good!

    FYI, you’re not going to get that crispy of a roll doing that method you guys did. Moisture is the enemy of crispy. If you want crispy, you should use a dry coating and spray the outside with a little bit of oil. I have not been able to successfully make airfried tempura or british battered fish. However I have been successful in making taiwanese popcorn chicken and katsu (you have to dry the meat/protein out a little).

    A light spray of cooking oil makes things much crisper. Good luck. There is a small learning curve. Enjoy!

      Right? See my comment, lol.
      Charles needs to learn about social Etiquette, especially on a Global yt channel.
      Elbows never belong on a table.
      Napkin goes on the lap first.
      Etc., ad nauseum...
      Hiro was raised in a very formal environment. So was my mom... raised in Japan right after Hiroshima and Nagasaki.
      She will be 83 this year.
      Put others first, especially for an International YT star like Master Chef Hiro-San.
      Chef Hiro-San saw it, and graciously ignored the social faux pas.
      Yay, Chef Hiro-San!
      Well done,

    Hiro! Thank you so much! I have been making sushi rolls for about a year now & I was hesitant about using an air fryer. I have a Power XL Fryer and thanks to you, now I can make all the tempura foods now! I know the trick is to dip the batter sushi or vegetables into a bowl of panko or if not, you will have a mess. Great job Hiro & Gustavo! 🍣 👍🏼👍🏼👍🏼

    Whenever do a panko battered dish in the air fryer, I toast the panko before coating whatever I'm cooking. That way, it gets that "fried" look as well as being super crisp. I don't personally think I'd try a wet batter in the air fryer though, that seems like it wouldn't set.

  • @liannehoenderboom1018
    @liannehoenderboom1018 3 ปีที่แล้ว

    maybe for the "traditional" version, use a basket or baking tray in there that doesn't have those little holes in it, that might help prevent the rolls from sticking to the bottom, as the batter won't get in those holes?

  • @craign7995
    @craign7995 3 ปีที่แล้ว

    Excellent experiment Chef Hiro! How about a hybrid version. I’ve made tempura string beans in a higher temperature deep fryer (to set the batter and not absorb so much oil) and then finished them in the air fryer. The air fryer is also great for re-crisping leftover tempura or panko foods.

    Hiroyuki,
    It seems that the air frying might be healthier, but I think the browning and crunch
    with traditional cooking would taste better.

    Everyone with an engineering background would tell you that air fryers are just expensive ovens intended for commercial purpose. Plus You can't fry without oil, only that kind of fat can let you reach that high temp to make it crunchy. So yeah next time put it in the oven and you'll get the same results

    So an air fryer is just a bigger version with a fancier name of that popcorn maker sitting in my cupboard since 1993 after my parents got it in 1985?
    And I've heard an uncut maki is called a 'sushi burrito' and sauteed king oyster mushrooms are 'vegan garlic seared scallops'

    Charles... when someone cooks for you, they should always get the first bite.
    At the dinner table, no one takes the first bite until the host or hostess is seated first.
    Social dining etiquette standards.
    Next time? Have Chef Hiro-San cut the salmon skin roll in half, and let him have the first bite, ok?
    Old Mommy Mantra of mine?
    A lot of life is negotiable.
    Manners is not one of them.
