The salmon burger looks great! It reminds me of the salmon patties my mother would make from leftover canned salmon mixed with eggs and bread crumbs and sauteed. This is the supercharged version. My favorite part of it is how Hiro San just digs right into it and isn't afraid of it all falling apart.

Hiro, when you cook sushi rice with "no seasoning", does that mean no salt either? I was always taught to salt any water a carb was boiled in, rice, pasta, potatoes.
Not sure what Hiro will say but I've never salted water for making sushi rice or any other short grain "Japanese" rice. If we add anything, it's always after the rice is cooked. That being said, you do you. :D

I LOVE this recipe, but in burger form it seems very awkward to eat (far too thick) and quite messy. It might be better off served like a tuna tartar or like a crab cake: use a single patty, leave off the top rice cake, and serve with a fork. Such a tasty and beautiful dish! Thanks for sharing!
