Vegan meal prep for 8 days backpacking // easy vegan hiking snack recipes

  • I meal prepped for 8 days of backpacking. I prepared a lot of my own food so I can reduce plastic use. I calculated the calories of everything to know how much food I would need. The required amount of food will be different for everyone and depending on the hike.
    Kale chips:
    10 oz kale de-ribbed
    1 cup cashews
    5 tablespoons nutritional yeast
    1.5 teaspoons salt
    1 tablespoon olive oil (or more)
    1/2 teaspoon garlic powder
    1 teaspoon water
    Date protein balls:
    2 cups dates (about 42)
    1/2 cup pea protein powder
    1/4 cup cocoa powder
    1/2 teaspoon salt
    1/2 teaspoon vanilla extract
    2 tablespoons peanut butter
    1 tablespoon chia seeds

    This is unreal😍🌞so many backpackers vlog about their meals and it's stuff like mac and cheese and prepackaged dehydrated pasta from the store but this is so healthy and environmentally friendly and everything I want in backpacking! Definitely would love more vids like this :))

      I have some dehydrated meals I am going to try on my next trip soon. I'll show everything I eat on my next backpacking trip :) It will also be pretty healthy.

    Wow I loved this! Very clever and smart ideas and you're very dedicated for dehydrating all that stuff yourself. If someone doesn't have a dehydrator, frontier coop online has dehydrated beans you can buy by the pound or even spiced dehydrated beans for instant "refried" beans. I've bought them before for quick protein on the go. Thanks for sharing all your work with us

      Last time I went backpacking, I just bought dehydrated soup mix in bulk, but I wanted to try to make it myself this time. That is a great idea also!

    The peanut one, I would have added coconut milk, and dehydrated the mix on the jelly roll tray, so it was a powder. I would mix the dried black beans with minute rice, and nutritional yeast, plus dehydrated peppers.

      hi, it was great! I had just enough food. My food was yummy, but I did get a bit bored of the food which is normal when backpacking.

      I put the food at the very top of my bag. They still got a bit smashed but not too bad.

    I looked up on your blog your recipe for your cookies and it’s calls for 1/2 cup baking powder, is tht correct?
