  • @brianrollins3245
    @brianrollins3245 3 ปีที่แล้ว

    any reason why you do not first brown the meat and sweat the onion and carrot before adding water? I did not know there was a name for that type of vegie cutting - Chinese and Germans have names for everything; I was told it increases surface area (p.s. And peeling, faster and safer if peel towards you)

    • @CookingAhPa
      @CookingAhPa  3 ปีที่แล้ว +1

      Actually u can brown the meat if u like, but usually for this soup, we only blanched it to remove the excessive bloods in the ribs. This is meant to be a very clear soup.

    Instead of beef, I use chicken [with bones], add celery and a few slices of ginger. I usually leave the skin on the potatoes. When possible I also use one carton [ 1 liter] of chicken stock soup. I pull all this in my pressure cooker for one hour. It’s very flavorful without salt and pepper.

    That's a fruit and veggie peeler. Oh dear Ah Pa you took off too much skin of that carrot. You can try scraping the skin off the carrot with a knife which is what my 84 year old Mum does as her eyesight isn't good and she still wants all her fingers intact. We call this ABC soup too in SG and it's a popular tasty, clear nutritious soup.
