Salmon Coconut Soup (0:25)
3 tbsp canola oil
1 pc small onions, chopped
3 cloves garlic, minced
1 (1 inch) pc ginger, grated
2 pc red chilies, chopped
2 pc lemongrass, white part only pounded
4 pc kaffir lime leaves or zest of 2 limes
2 (400ml) cans coconut milk
2 tbsp fish sauce
1 tsp sugar
1/2 kg salmon fillet, skin removed and cut into 1-inch pieces
100 grams shiitake, sliced
100 grams oyster mushrooms, sliced
lime, cut into wedge
cilantro, for serving
Sheet Pan Salmon (4:35)
1 kg sweet potatoes, cleaned and sliced thinly
1/4 cup olive oil
salt
4 pc salmon fillet
4 pc eggs, sunny-side up
1/2 cup sour cream
salmon roe
1 pc small red onion, thinly slied
Salmon with Golden Rice (7:48)
1 pc salmon fillet, skinless and cut into 1-inch pieces
salt
1/4 cup canola oil
1 pc small onion, chopped
4 cloves garlic, minced
4 pc eggs, yolks and whites separated
4 cups day-old short-grain rice
2 stalks scallions, chopped
Furikake/Japanese rice topping
Salmon Burger (11:16)
1/2 kg skinless salmon fillet, cut into 2-inch pieces
5 stalks scallions, green parts finely chopped
1 (1-inch) pc ginger, peeled and grated
2 cloves garlic, grated
2 tbsp mayonnaise
Dressing
1/2 cup mayonnaise
2 tsp vinegar
1 tsp sesame oil
salt
Pickled Cucumbers
1 pc cucumbers, tossed in salt and squeezed
1 tsp sugar
1 tbsp vinegar
4 pcs brioche buns, toasted

Great recipe! you can use Galanggal instead of ginger in your Thai coconut soup for more aroma and flavor, but if not available ginger is a good substitute into it.

whats can we sub for khafir (wrong spelled? 😅) nd shitake ? tia
A great substitute for Kaffir leaves would be lime zest (the outer skin of a lime) if not available, lemon would be good as well. As for shiitake, simply use the dried ones but soak in hot water for at least 1 hour.
