Ever since Jungkook posted the recipe, i have my cooking senses tingling. Now, Tina trying it is the green light i needed 😭
I know Kookie has a liking for spice and this recipe did come out of experiment and his personal taste. So, i am curious bout what it tastes like.

With the cucumber noodles, as you notice it did release a lot of liquid. The best thing to do is to salt the cucumber and let it sit for half an hour. Drain the liquid and squeeze on the cucumber to ring it out a little bit more. Then you can add it to the sauce. It'll be more noodle-like.

@tina_yong if you do this, it will also keep the cucumber nice and crunchy too! I do this method when I make cucumber salad.

I've made the JK sauce at least 6 times and every time it's soooooo good!! I don't like perilla flavor so I used sesame oil and I add minced garlic and crushed sesame seeds!!! I do use the cham sauce (yay for hmart!)

Cham sauce and the onion pickling sauce you used is quite different for me. Maybe that’s why?
It's the cham sauce that messed up your recipe. The onion sauce doesn't act as the best substitute in this particular recipe.

I think for Jung Kook’s recipe, I think the spicy mayo he used was from the buldak (fire noodles) brand so I’m wondering if that swap is what affected the taste

As someone who loved udon I am so excited to try the potato noodles as they are gluten free it's been nearly 20yrs since I had udon!
Have you ever had gnocchi? Cause those fat noodles are made exactly the same way you would make them if you were doing gluten-free ones just a different shape if you want to know what the flavor would be.
@KatjeKat86 I have and I love gnocchi so thats good to know (ive never made it from scratch) I'm hoping these will be bouncier like udon because they don't have egg but if they are the same still won't be a waste :D
@Alertse This recipe (without the water) is pretty much the recipe for Polish Silesian dumplings (kluski śląskie). The key to get the "bouncy" dough is the amount of flour. The more you add, the more gummy like they're going to be. But minimum is ¼ (25%) of the potato weight (so eg. 400g boiled mashed potatoes + 100g potato flour/starch).

when the oil cooled down and already added to the spices, simply put the mixed spices into microwave to heat up for 5s to maximize the spiceness. remember to cover the bowl with some films to avoid any mess🥰

The buldalk mayonnaise that Jungkook used is basically mayonnaise with the original buldalk sauce combined. It’s amazing in sandwiches or even as a dip for chips or nuggets! ☺️

I’m not sure if your red pepper flakes are less potent than ours because that would set my entire body to flames lol. I can only add a sprinkle of them to an entire dish and if I add a little too much of a sprinkle it’ll be spicy. I’ve often wondered this when watching people make recipes with it from different countries. I know my tolerance is a lot lower but I use red pepper flakes in quite a few things so you would think I would have a tolerance to it you know. Needless to say home cooked noodles are right up my alley, YUM 🤤
