My original 16" white spoke wheels and tires, which came with my new 2003 Mini R50 were stolen, and I replaced then with 5-spoke 15 inch wheels and tires. The wheels look like wheels often used on the original Mini Cooper, and I get a lot of complements. Also, more tire between the road and the wheel makes for a better ride which in my opinion does not hurt it's handling at all. The tires and wheels where both bought from Discount Tire and shipped to me mounted, balanced and ready to install.......,Even though I ordered my Mini with the optional 16 inch wheels and run flats, it came with a 15 spare wheel and tire mounted underneath near the back of the car.........
I have the same wheels (also from TireRack) on my son's F56 JCW - they will work fine if you upgrade the "binders" ;-) I went with Vredestein tires as I wanted good performance in the wet and in the snow and didn't want to swap for dedicated snow tires (we get some snow here in Ohio but not enough really for winter tires IMO). The TireRack's prices are sometimes a little bit high but I've had great customer service and most of the time my wheels/tires come in one or two days balanced and with TPMS installed (extra $ of course) - if you need new hardware based on the OE vs. new shoes they'll include it. I've purchased 3 sets (2 for MINIs one for a Kia) and have NO ISSUES.

Ditching the runflats is always going to be better (unless of course you tend to get flat tires and either don't have a spare/inflator kit or in an area that's not covered by roadside assistance)
Yeah, I have mainly used rf tires and the difference is unbelievable. I can’t believe I used to drive my jcw up 10 km of dirt mountain road every day with rf tires… 🤦♂️😅

I put Michelin Pilot Sport 4S on my F56 JCW. It was as though I got an entirely new car. The grip was fantastic. A few days ago, I put Michel Pilot Sport 5 (there's no 5S yet except for a few factory cars) on my F60 JCW. No wheel spin, and even at -7C they grip very nicely. Like you, I'm taking roundabouts, corners, and on/exit ramps a little too quickly. But again it's like getting a whole new car with the improved handling and grip.
