    I'm half Ecuadorian and mi abuelita makes the sugar/cheese empanada as a quesadilla instead, but same thing. And she takes her plantain, slices it down the middle and stuffs it with cheese then puts it in the toaster oven. Cheese and plantain. Yes please. Thank you for this video!

    I love this! I married into an Ecuadorian family and I haven't yet attempted to make any vegan Ecuadorian recipes, so I'm excited for this and to share it with family!

    I have Ecuadorian family, I'm Puerto Rican but we share many of the same foods, with slight variation. Like we have a similar potato fritter called relleno de papa. We fill it with meat, roll it into a ball and fry it. We also commonly eat fried sweet plantains, we call it amarillos or maduros. And we have empanadillas(some people call them pastelillos, they would be wrong lol) which are like the empanadas but we typically fill them with seasoned meat, seafood, cheese or "pizza" style. We use a lot of the same ingredients like achiote and cilantro.

    I'm ecuadorian and eeeeeverything is so on point. I loved it. I also like eating maduros with vegan cheese or salprieta (it's mainly crushed peanuts but sometimes they put pork fat in it so we have to ask first). Our cuisine is very simple to veganize so I loved this video.

    As a puertorican, who loves empanadas but also loves cheese and guava. I would make these from cheese and guava paste. 👀 Need to make them now. A savory and sweet version.

    Spanish food can be very unique: chocolate con churros, paella, tortilla de patata, cocido, torrijas, rosquillas...

    Oh yes, I can relate to 'zeppole' (the kind of Italian donut). My mom decorated them with vanilla custard and wild cherry jam on top. I used to bring some to my dad who was working in the garden. For a big family, a lot of zeppole had to be prepared. I remembered them resting on the table, covered with a cloth and rising. :D Jasmin really cooked a lot and well. Kudos to her!

    Love love love this series! I grew up in Hawaii so there's a lot of Hawaiian and Filipino foods that you you just can't get in the states (not to mention vegan!). We pretty much make Asian, Mexican, and Italian foods, but I know there's a whole world of delicious cuisine we've never tried. I'm stoked to try these recipes (and more to come!)!

    I love locro de papa! I had it when I was in Ecuador in 2004 (I was vegetarian at the time) and always wanted to recreate it. Love that you made a vegan version!! At the restaurant it came with partially popped huge popcorn cornels (A specific variety to the Andes I am sure) - not sure how to get this but it was super good this way.

    Next cuisine suggestion: African! Although personally I have *zero* experience with it, it seems incredibly interesting and flavourful.
    I also recently stumbled upon two, potentially good resources for you:

      Would love to see it but maybe a specific country or region. Otherwise that’s a whole set of series in itself! That continent is huge - so many different cultures and variations within each country even, some wiiiildly different from others - I mean as an example you can physically fit like 5 Ecuadors in the size of Algeria or Sudan alone 😱 [edit: ok no one asked and it’s so irrelevant but I’m a nerd and had to find out: You can fit 7 Ecuadors in Algeria! ...and still have a bit of room!]

    Ecuadorian Chilean here. My grandma cooks food from her country all the time. I basically grew up with it. Food from Ecuador is just so delicious.

    Amazing video, I’ve never tried Ecuadorian food before, I’m definitely going to try out these recipes. Which vegan cheese did you use, (especially for the Llapingachos, they look soooooo good 😋) I’m struggling to find a cheese that tastes good melted.     This series is amazing and I’m so happy that I’ve discovered it! I’m doing a similar thing on my own! Mine is also countries/cultures around the world, but I just spread all the recipes over the course of a few days or a week.

    That soup looks amazing! Also, IMO Ripple milk is the best for creamy recipes. I use it for cream of mushroom soup and mushroom stroganoff. I’ve also used it with tahini to make a cheater Alfredo-like sauce.

    I’m Ecuadorian and just i had the empanadas, no sugar!! Lol.. Ecuador is a small country but wow is incredible i never have the opportunity to try traditional food, i grow up in a family with a healthy lifestyle, because on my grandma. Any way !! I love learning something new even though i am from there.

    Love Ecuadorian food, I was in Miami and went to eat at a Nice ecuadorian Restaurant, is called Mi lindo Ecuador, BUT I was there 3 Times and the Food was so good, my family had a great Time there, Greetings from Boston Ma.👌🙏👏🌎

    I liked to watch your different series show. Which is so good and some like I can’t cook for so long. So I can so simple cooking like 30 minutes from Rachel Ray’s old Food Network TV Show. I love it when I am so fascinating with my favorite sweet plantain fries. I want to try do something like else for best way to cook meat free or veggies with mash potatoes fries. I remember one of my ex boyfriend Puerto Rican taught me some Spanish rice and Meat (former meat) with mash potatoes fries almost like your. So keep going to next your new series of show. Good job and proud of you are very hard work cooking. 😉.

    This video reminds me a lot of Costa Rica's food, we also eat a lot of fried Plátanos maduros and empanadas, but ours are made with corn meal

    Very common to do it with fresh cheese on top but I would say Verde is more commonly used as patacones. It was weird at first, later it was perfect together

    Those recipes look so good. Chris does your mom make the St Joseph zeppoles that are filled with either ricotta or custard cream.They only come out March 19th for his feast day. I would love to see those veganized. Your mom Italian recipes are so good. Thank you for your channel : )

    Maduro with cheese are like Mac and cheese! They are meant to be together hahaha in the coast we also add salprieta (ground and toasted peanuts) One word. Delicious

    This video makes me so happy because I am also half Ecuadorian haha. My mom is German and I grew up in Germany. I've always felt like that something was missing because all of my family lives in Ecuador or other countries. Food was a way for me to connect to my Ecuadorian heritage. At that time I also started to learn Spanish. I've met my family and I can still remember the things my father used to cook for me, but unfortunately he died when I was fourteen and he was the only thing that really connected me to my Ecuadorian roots. I really love Encebollado, it's not vegan, but really good. 😁

    Looked forward to this video in the title, was bummed to not see ceviche but the empanadas looked good. Also maduros are best made when they are much sweeter and softer aka blacker and mushier. I’m 🇵🇷Puerto Rican, and growing up eating tons of maduros, it’s such a different experience when they are not semi sweet and really soft. I personally don’t find it worth it to eat semi sweet maduros lol.
    I was going to say you should do Puerto Rican next, but you already are! Which I’m super curious about. Hope there is some Mofongo in there😛

    You did such a great job on these recipes 😋 definitely inspired me to make all of these. I’ve never had the soup though. Wonder what part of Ecuador your family is from.
    I also hate papaya! It taste like vomit to me lol 🤮 but soup is ALWAYS good with rice.

      The soup is from the Ecuadorian highlands, it's amazing, there are varieties of locros, from different beans, and ingredients but the most popular is locro de papa.
