Just to add to the information on the video: The best pork related food is in the highlands like Quito and surroundings and Cuenca; for secos or encebollados Guayaquil is the place; for seafood related and green plantain paradise food, Manabi province is the best. You can usually have all the named foods anywhere in Ecuador but to get the real deal it's best to get the specialized local food 😉
And you should mention encebollado as a top five it’s amazing and you eat it all over Ecuador from Quito to Guayaquil we eat encebollado for breakfast it could be lunch dinner and once in awhile we Ecuadorians eat it after a hungover lol

This is a story about seco I know: At the beginning of the 20th century petroleum was discovered in Santa Elena, Ecuador. So an English company was hired to extract it, this was the Anglo Company. They established a camp that soon became know as Ancon town (Ancon= ANglo COMpany). People from Santa Elena was hired by the English for doing chores like cooking. A lunch in Ecuador usually includes two dishes: a soup and the main dish or “Segundo” (second dish). English didn’t like the soup because it was hot and Ancon is a hot place (it is located near to the beach with a temperature over 30 degrees Celsius) so they asked for the ”second”. The most common second prepared was the goat meat stewed (goat is an animal that is easily found in Santa Elena). As the English asked for the second, the natives started to call that dish the “second of chivo” and later because of the local pronunciation it became the “SECO” of chivo. I don’t know if this story was true but it sounds logical and credible, doesn’t it?
You shoukd have travel to the ecuadorian coast, you just show us dishes from the serra, there´s a lot of tasty dishes in the ecuadorian coast like encebollado, caldo de salchicha, guatita, arroz marinero, cangrejos (crabs) bolon de verde, bollos, so if you come someday do not forget to visit our beaches and the other ecuadorian big city called Guayaquil, you are going to love the gastronomy.

Ecuadorian here. You mentioned a lot of good dishes and snacks. Definitely my go to option. You missed a couple seasonal foods like “guaguas de pan”, which are a form of pastry decorated to look like a kid and it’s filled with chocolate, fruit marmalade, or dulce de leche. Also there’s “colada morada”, which is a drink made with red berries and such. It’s really good and served with guaguas de pan it’s even better. But my personal favorite dish would be Fanesca hands down. It’s a seasonal soup that contains many different grains in it. It’s coupled with eggs, little bread balls, chili, or fish if you want (I personally don’t). That one is my favorite because it’s a really heavy soup because of it’s consistency and the amount of stuff in it. Definitely my #1 recommendation.
If you're coming here, Ecuador, then I'll give you some advices about food you must have to taste. For instance: hornado, mote, tripa mishki, papas con cuero, librillo. Also the most cities have drinkable water so don't worry. But if you're grabbing a bit out, make sure you don't eat at "mercados"( kinna of outside grocery shopping?) Because the don't prepare food in a aseptic way. I'm from there and I've never got a food disease

Hey! An Ecuadorian here (from Quito) just to thank you because I happen to be visiting in Cornwall (UK) and was trying to show or explain about our food to my host family and this video is perfect. There are tons of things left out but still a great video. One of my favorite snacks is chochos con tostado and my next favorite is empanada de morocho. Catherine Saunders drink bottled stuff until your body gets used to the water(introduce it slowly). when vendors make juice they 9/10 use tap water. same with hot sauces or sauces in general. take some pills before going. I’ve gone many times and I’ve only gotten worms once in my life, my sister on the other hand gets sick every single time we go.

I went to the Galapagos, but Ecuador was honestly my least favorite country in South America. Go to Columbia or Argentina for better food.
