You sure your calculation right ? 100kg in 2 hr, 50kg in 1hr, ~1kg per minute, ~100gm every 10 seconds.... What cook that fast ? Even if continuous cooking, need to have 10kg cooking at any time in that 2 hours. Lesson: Stop lying, do not use clickbait title or exaggerating, people hate that, before your channel lose its credibility.
Maybe, if each pan can cook 4 kg of chicken, so 8 kg in two pans, each batch will take 8-10 minutes of cooking (it depends on how the coating is made because there is a coating technique to speed up cooking)... we only need 10mins, so in 1 hour you can cook 6 batches, 8kg x 6batches = 48kg (within 1 hour), in fact you can make a little less than 96kg in 2 hours in two pans. To save time... while he is cooking, he is already kneading the marinated chicken in the dry coating so that it is ready for the next batch. Conclusion...it's really possible, because I cooked my fried chicken of 1kg in my pan which is a little too small to fit all at once, especially in the big pan, I even have a monitor on the heat of the oil..I shoot with infrared temperature, 180 degrees celcius.. the temperature of that will fall at the same time but it will still be in the safe heat, brother's stove is really good. Its heavy duty stove has many burner holes.
