Let's give credits to these vendors. They are trying hard to do their work well. If you are cooking with oil with street carts, in restaurants or even at home, there are oil spatters everywhere. Most of them are doing the cooking neatly. Few are not so neat. But do we know what's going on in high class restaurants where we eat? I got sick for 3 days after eating in a very nice restaurant and got a very long hair in one classy hotel resto. But I never got sick after eating from these food carts during my college days. As long as the food is cooked well and they are not spoiled then it's fine. I don't buy if I have concerns about the food and the vendor. I like street foods. These guys are trying to earn Money in an " Honest" way. Nice video.

I visited the homeland last year (my first visit in 8 years) and being able to taste street food again brought so much good memories. (I also made sure to eat as much Jollibee because where i live the closest Jollibee is 1 hour and 30 mins away.)

The cooking oil can reach a dangerously high temperature so you can't really just switch the oil whenever you want. You need to wait for it to cool down completely and that amount of oil takes a really long time to cool down. With how many customers they have lining up, they simply don't have the time to change it between orders. This is the same with restaurants and fast food but you don't really see it because most of the time the kitchen is at the back of the store, where some of them reuse it for days before they even change it. Not to mention how expensive cooking oil is, I doubt that they'd change it the exact moment it turns dark.
