Speaking of that, they're incredibly easy to grow! I recommend adding a plant to your garden if you like to experiment with peppers.

Probably when the fishermen are on the boat . When they pull in their catch shark is more than likely a "junk" fish. But knowing the shark would probably die even if thrown back into the ocean. The fishermen just use it as a cheap local fish.

This has nothing to go with Jamaica. It was created in Maracas beach, Trinidad. Andrew Zimmerman called it the best fish sandwich he ever had. I have no idea why you are associating it with Jamaica. I've watch several Jamaican TH-camrs visit Trinidad, they all have never had shark. Shark is not eaten in Jamaica. Further more, chadon beni (a key ingredient in trini cooking and one kf yhe sauces you'll find on bake and shark) is not used at all in Jamaican cooking.

Scotch bonnet is nearly the same spice as a habanero but has a sweeter flavor and ripens to be much more red
In Trinidad they would use pimento peppers, a cultivar of chile with the flavor of a scotch bonnet but no heat.
Catfish would totally work for the fish IMO

Jamaicans dont make green seasoning or use chadon beni (culantro)....not everything in yhe Caribbean is Jamaican. This is 100% a trini dish.
Cilantro is a good substitute for culantro, you'll barely be able to tell the difference.
