Thanks so much! My apologies on the mistake of leaving flour out of the ingredients list. I used 190g all purpose flour. In terms of the fan, I have a conventional oven so there is no fan option. So, to mimic the structure of these I would opt for keeping the fan off for yours and keep the baking sheet in the upper portion of the oven. You can also potentially reduce the cooking temp to 350.
