The sunset long exposure is out of this world! incredible how calm the water on the Atlantic side. However, the mud structures can make a separate composition altogether with a tripod set as low as possible.

On the first location, are the shapes on the ground made of mud, rocks ? There are so many carrelets on this part of the Atlantic coast, between Saint Nazaire and Les Moutiers en Retz

A wee tip for your sinking tripod issue - throw three old CDs in your bag, the holes anchor the legs while the discs stabilises it on soft sand.
I heard three tennis balls can do the job but your idea is a space-consuming solution :-)
