Hi there, this recipe looks great and I’m going try it out. I’m wondering if I made a thicker sugar syrup and slightly dipped them in then added the nut garnishes, do you think that might let them stay crispy?
Hi. The puri does not stay crisp a day or 2 after the syrup is added. You can, however, store it uncovered, which will help better. I highly recommend using icing sugar if you want it kept longer.
Im sure you can. However i have never done so. I would recommend checking the texture once thawed. Pop into a light warm oven to crisp up again if required.

Thank u. For some great tips..i also use melted butter instead of ghee and i add a few teaspoons of rose water to my syrup.

It works wonders. The best part is that you can use that oily flour in bits when making roti. So it doesn't need to be thrown away.

Can I replace gee with butter?, how do you elimate the oilness 😢...
You can use unsalted butter. I've shown in the video how to eliminate the oil. Watch till the end.
