Handy video but I'd challenge your instruction to cut off the root end when dicing. Based on my own experience as well (as watching several other TH-cam Chefs) it really helps keeping it on to stop the onion bleeding (helping with crying) as well as keeping it much more stable while you do you horizontal slices before dicing
I agree. When i retired, I gifted myself a week at the Culinary Institute of America to attend the Basics Boot Camp. They taught to leave the root end intact. It actually provides kind of a handle to hold the onion while you cut.
Great video!! I have also tried leaving the root and slicing lengthwise instead of thru the middle and it helped me immensely!! No tears for me. How about an updated video to let others know Chef?
To prevent tears, put the onions in cold ice water for a few minutes before chopping, and/or make sure your knife is very sharp to prevent the juices from extracting. Orrrr you can also put on goggles😂😁it sounds silly but it works👌🏽

I think you should indicate at some point that the longitudinal (cut with the grain) julienne will be less "onion-y" than the latitudinal (crosscut) julienne. The crosscut releases more syn-Propanethial-S-oxide; that is, the stuff that makes you cry. It also releases more of the other chemicals that onion up a dish.
Saw a vid that said to put a wet napkin on your cutting board as you're cutting the onion. It will prevent you from crying. I was doubtful, but tried it, and it worked.
Don't cut through the dirty, papery skin of the onion with the same knife that will produce the finished cuts. Peel the papery skin and first few layers with a paring knife. Great cuts. Nicely done video.
Put your onions in the fridge let them cool before cutting them to stop the onion tears. I used to slice bags of onions too this trick almost stopped the tears completely

I worked at a steakhouse for five years and always cut vegetables near the walk in box. When I had an onion cry, I went into the walk in and stood with my face in the reefer blower air stream. As far as knife sharpening, it generally isn`t always necessary to sharpen them. I have a couple of washer hones and a kitchen steel that I use, as a kind of "iron" to touch up the edge. The knife blades last much longer that way.

I know this might sound crazy, but have you tried using a bowl of water to help prevent tearing up while cutting onions? It's been two years since this video, so you may have learned some new techniques since then. Personally, I find that having a bowl of water next to me always helps, and I never tear up when using it. I'm not sure why, but it seems to work for me.
I don't knownhow true this is but I read that if you use a sharp knife and speed, the tearing is less. Bruising instead of slicing clean causes the gas. I only cut one onion when cooking bc it's just me and the wife and I never have a problem. Give it a shot.
you could just try squints in-between the cuts once you get going since you generally know and can feel where the knife goes and can avoid onion squirts flying into your eyes or that spicy water getting picked up by the air/nose. Seems to work as well but might not be as effective.

Bingo!!!! Someone told me that wearing contacts helped, but I wore glasses. Eventually I got contacts and it rocked my world. Not only could I see but I didn't cry when cutting onions.
The vapors of the onion are shooting out when you cut it. There's a video on youtube somewhere. You can't just breath out. You have to blow out hard like you're whistling but a little wider and on every slice. Granted I'm not cutting 50 onions at a time but with four or five I don't feel a thing.
For anyone looking for that foolproof way to cut onions without crying, get yourself an old pair of ski/snowboarding goggles and keep them in your kitchen. They are now your onion cutting goggles.

I always light a candle before I cut an onion. It burns while I cut and I have no tears. I have never had it fail. ❤

Age-old hack for no tears while chopping onions. Light an unscented candle right next to your cutting board. Works every time (for me at least) ;)
Put lemon juice on your cutting board to prevent crying.

In professional kitchens, the most junior cook gets to cut onions all day long, unless someone screwed up big time. It never really gets pleasant.

If I'm wearing my contacts while cutting onions it helps. I don't shed a single tear.
I cut the root annd tip off, throw them in a sealed container and then chop the onion.... i also wear contacts. I never cry.
I’ve noticed that when I store onions in my fridge, I don’t tear up when cutting an onion!
Washing the onion tends to reduce the tears when cutting. It removes the sulphar that makes you tear up.
I wear swim goggles when chopping onions lol no tears!

For avoiding the eye burn, set a literal powered fan next to your cutting board. Weird? Yes. Does it absolutely work? Also yes.
It would be helpful if you showed your hand holding the knife with the hands motion for each of this cut

Chef cuts onion across from the grain, to have more onion oil to flavour the dish. CooK cuts onion in many ways, mostly along the grain!
Small Dice are 1/4 inch, medium dice are 1/2 inch, Large Dice are 3/4, and Julienne are 1/8 x 1/8 x 2 inches
