Looks like you did not pruning the side vines for the plants. They are too dense. You need to cover the cauliflower with leaves like wrapping the top with leaves and put a little stone on it. Otherwise they will turn purple.
I hope your family there appreciates all that you've done with the garden and all the wonderful produce you've gotten! Some setbacks are expected and that's OK. You're a hard worker and you've done really well for the first year!

I think you should forgo the idea of having a greenhouse in the summer. It seems your garden outside the greenhouse provides enough produce to last the summer anyway (the first harvest). In the winter however, turn your entire garden into one giant greenhouse (if you can). By this way, you'll have veggies throughout the year. For the climbing plants, i've seen people use bamboo sticks or any sticks and tie them together into tripods and place them over the growing plants. The plants will climb up the tripods and therefore eliminating the need to tie the labor intensive strings. They climbing plants treat the tripods like another plant which they can cling to whereas with strings they cannot.
I made the same mistake, it's just the humidity that breaks the treads. Happens. I used coated metal thread the next year and it went just fine. The Humulus Aurora weighs a ton but is still hanging on a two-year-old metal-coated thread. Sew the beans in spring to eat the tops, a delicacy, then plant different things in its place. Beans grow way better outside than inside where they burn and get molt from the heat. If this is the only mistake you're doing just fine Miriam. I am a Pattison lover, all my plants made male flowers because of the heat and rain. No Pattisons this year alas. Us gardeners suffer do we XD

I’m present to how and why so many farming communities developed drying and fementing as ways to preserve their harvest into winter when fresh produce is scarce. There are a couple of Chinese TH-cam videos I watch along with yours that are also of farming but also show a lot of drying and fermenting, and wild foraging. I wont list them here out of respect to you without your permission. Gardens are always growing, thus changing the landscape including any human structures we may put up. My husband keeps trying to build “permanent” structures but I refuse them. I love to live with the changing nature of Nature, and finding ways to make use of it all.

We learn from our mistakes, hopefully the ones you've saved will be fine. I've had a few failures this year too, I didn't think the radishes enough and the cucumber plants were too close together. Well there's always next year. Love watching your videos
Oh what a great pity Miriam, I'm so, so sorry but who could have imagined what had happened with those bad ropes and the heated metals!!! There is a very easy and absolutely beetroot salad recipe I was tought by a German lady. After cooking the beetroots (the have to be rather soft) cut them in thin slices and season just with two ingredients only: vinegar (even better if it's apple vinegar but any one would be fine) and sugar. Try the quantities beginning with not too much vinegar and a somewhat generous sugar. After one or two hours you'll have the most delicious and juicy salad. The taste of the beetroot changes completely with those two ingredients. You won't believe it. That salad accompanied buy some not too hard boiled eggs or eggs mollee at the side, I'm sure SamSam will love it because of the colours and the adults as well, but don't mix the beetroots and the eggs, keep them separately. The music in the video was a pleasure Miriam.

Amazing garden. I stopped planting vegetables a few years ago. I have many fruit trees and flowers, but planting vegetables is too much of a work for me.

I am surprised that you have cabbage and cauliflower. I was under the impression that they grow well only during cold weather.
