Italian Risotto

  • In this episode of Culinary Secrets Chef Tomm teaches us how to make risotto. This recipe is the same one I learned while working in Tuscany.
    Risotto
    Ingredients
    2Tbs Butter
    1 medium onion, cut into small dice ( approximately ¼ inch )
    2C Arborio rice
    1/2C White wine
    2 Sprigs of Thyme
    7C Chicken stock, hot
    4Tbs (1/2 stick) butter or more if you like
    1C Freshly grated Parmesan cheese, plus more for sprinkling or more if you like
    TT Salt and Pepper
    Method:
    In a 12 to 14-inch skillet, heat the butter over medium heat. Add the onion and cook
    until translucent but not browned, 8 to 10 minutes. Once the onions are translucent add the
    rice and stir with a spoon until toasted and opaque, 3 to 4 minutes.
    Add the wine to the toasting rice ensuring that it is all cooked off before you add any stock.
    Add a 6-ounce ladle of the chicken stock and cook, stirring, until it is absorbed. Add in two
    sprigs of thyme. Continue adding the stock a ladle at a time, waiting until the liquid is
    absorbed before adding more. Cook until the rice is tender and creamy and yet still a little al
    dente, about 15-20 minutes. Remove the thyme. See Note Below Remove from heat and stir
    in the butter and cheese until well mixed. Season to Taste with salt and pepper. Portion
    risotto into 4 warmed serving plates, serving with extra cheese.
    Note: This recipe is the base for all risottos. For instance if you wanted to make this a
    chicken and grilled asparagus you would cook the chicken and asparagus separately then add
    them hot, toss them with the risotto then finish it by adding the cheese and butter.
    Note: You may not need all of the stock

    Remember the recipe is a roadmap to the dish. If you don't want that much butter or cheese don't add it. Be happy, enjoy life and eat well!

      It's right the amount that it needs. Would put a little less Parmesan inside, though.

    I’ve used this video to teach me how to make risotto and have made it at least ten times over the last 6 years. I had green pea risotto at a cool Mediterranean restaurant and endeavored to duplicate it. It was wonderful. My family loves it and Chef Tom taught me how to do it. It rivaled the restaurants, believe it or not. Thanks Chef Tom! 💕😍

    Smoked chicken & made Vegitarian Mushroon Risotto this afternoon. I'm very proud. First time doing risotto. I believe it's spot on. I love when things work. Not an easy dish. Thanks for the help Chef Tomm. I'm a bus driver...but woukld rather cook than anything. Peace.

    I'm 16 a guy and just got into cooking but I found this amazingly easy and taste! I was actually telling my home ec teacher about this recipe but she had chosen one already, and when I added something's I learn through this to mine she made me write out the recipe because she loved it!

    this looks so freaking good!!! i love risotto!! i was in hotel management in college n had to take a coupla cooking classes n learned how to make this...i make it whenever i have the ingredients and time to make it...being i have a baby now i dont do a whole lotta cookin...i would love to do tons more...seeing this makes my mouth water...

    For some reason it is SO HARD to find people that will just show you the freaking recipe like you do. They want to spend forty minutes explaining how important their short grain imported west indian rice, that you cant get, is.

    Nice one chef. Toasting the rice makes a huge difference. Lot of chefs skip that step to save time on the line. Good of you to emphasis that step and the importance of adding warm ingredients and not adding heat to warm them. Excellent looking risotto.

    Chef tom...i must say, that is the BEST looking risotto consistency wise, i have ever seen. I am a chef also.
    When you put that amount of parm in there, my eyes lit up !! LOL

    I never made or had this risotto, however I watch Food network Chopped and they make it a lot on that show. I lovvvvee rice and cheese and think I would love it. I have been looking for a recipe and directions and urs seemed to be the best one for me to try! Thanks for sharing the tips!

    Nice video! The supermarket doesn't sell the risotto rice, so I had to buy a mealpack where you only have to add fresh ingredients... I only used the rice and followed your tutorial... I'm so glad I did... Thanks!

    This came out great. I hadn't ever tried making it in a sauté pan before and I think that is key to getting the right consistency. Also never heard about the trick restaurants use to make it "halfway" and then letting it cool and dry on a sheet pan. I can make this for parties now and it won't chain me to the stove... Thanks Chef Tom!

    I used this to make my first risotto ever! it turned out great!! I just did a mushroom risotto, but my 4 year old daughter loved it and shes hates onion, celery, mushroom, AND rice!!! haha thank you!

    @whitemachine Thanks for writing. One thing I really love about cooking is that you can do anything you want to the food, add, delete, change around but in the end when you eat it if you are happy it is all worth it.. Please feel free to change any of my recipes to your own personal taste.
