Hello from Bangalore, india. Great looking dish. Chickpea curry isnonenif ourvstaoles. We make from both light coloured chickpeas as well as brown ones. We soak the chickpeas overnight and cook them usually in pressure cookers but also in open vessel, if one has the time. (I haven't seen canned chickpeas I our markets but may be available in special stores). We use that cooked water for curry instead of extra broth. All the spices that you have listed are ground with onion, garlic and ginger into a smooth paste, together with some tomato. This forms the thick, creamy and juicy gravy. We add either coconut or some cooked chickpeas while grinding the masala paste. It is usually paired with white steamed rice or chapathis (indian flat breads) or pooris (puffed wheat breads).. I would like to say that the version that you have shown here will be easy to make and will be very tasty. Thank you for the lovely video. To end I would say that in India we have many many traditional vegetarian dishes which today can be labelled vegan.

No worries! You can also stir in chopped parsley, mint, or other tender herbs and greens. As for the chickpeas, you can do either, but it will soften anyways after sitting in the curry sauce.
Have you tried cooking it the Indian way: cook the spices in oil first for a minute, then add the onions and the rest, as per your recipe. The flavors are even more intense that way.
So i really want to make this but unfortunately, coconut gives me a really bad headache and makes me nauseous or worse if I ingest it. Is there anything I can substitute for it?
