Mike Colameco's Real Food WOOD COOKERY

Wood Cookery, these days circa 2022 there's a fair amount of open flame wood cookery in Manhattan and Brooklyn, Lilia, Shukette and Ci Siamo are three great examples but here's a look back to the mid aught's when it was a real rarity keeping in mind that when Chef Frank DeCarlo opened Peasant in 2000 his entire kitchen was wood fired, the cooktops, everything.
