I mean to say that they see fine dining as some sort of ultra high-heat, swearing and cursing filled environment, whereas in most cases it is actually quite the opposite. If you absolutely have to swear as a Head chef that means that you have LOST control, not that you are IN control. That is what I meant to say.

I had the opportunity eat at Rezdora a couple weeks ago. Absolutely fantastic food. Can’t recommend enough. Definitely try the Grandma Walking Through the Forest pasta. Unbelievable dishes.
Thoroughly enjoyed watching Chef Secchi speak about and cook the dishes. An inspiration and very impressive indeed. He has reignited my passion for fresh egg pasta!

The chefs energy is so nice he has an intensity to him that you know he is full of passion but it’s not overly intense that it bleeds into the kitchen and makes everyone feel like they are unable to make mistakes. Seems like he is extremely valuable to the operation.

I could watch Stefano Secchi make pasta all day. I loved him at first sight since the Eater docu came out but I also love a good Bon Appetit take. Stefano seems like an overall nice guy and I want someone to look at me and light up the way he cracks open a fresh sea urchin. Damn, please take me here.

@sapphire7888 No. People do that about the french, and the spanish as well. Anyone that touts their particular nations cuisine as the best and above everyone else, usually gets slagged. If it seems like italians are getting the worst of it, it's usually because they're the ones making the most noise, by being utter arseholes to people that don't cook some kinda pasta dish or whatever else italian inspired food to their precise demands. Italians, at least online, demand that *everyone* respects their culture, yet they aren't willing to do the same.
