- Set in the heart of the uber popular Meatpacking district sits this ambitious sprawling space with a pan-Asian fusion menu. The folks that run this location and the two others are total pros with the highest revenue restaurants in the USA. We’ll spend a day with grizzled NY native chef Ralph Scamardella and his team to see how they pull off this kind of volume with great quality night after night.

Thanks Mike for giving me a little break from what’s going on in society today
Great episode. Great show. Serious operation here. Chef does not play. Kudos. 👊🏻
Had lunch at the uptown one a number of times (they had a very reasonable prix fixe) and the food was always great. The dishes here are amazing, though. VERY expensive but looks delicious. One of Mike's best shows.
Ultimate respect for Chef Ralph
I appreciate the technical, physical, logistical and let’s not sugar coat it FINANCIAL achievements of this kind of restaurant but there’s definitely a feeling of it being soulless
Man...those open flames on the woks. it must be stupid hot on that line. I'm sweating just watching this...
This is a great video, thanks. What an amazing restaurant.
Love Mike
Love this show
yep
An amazing business
Wonder how they are doing now.
"THE SHIT TASTES LIKE THE WOK".....Yaa Mon!
He couldn't accept I was an equal.
chef ralph is actually my uncle
This place makes me unhappy
+SethHesio why's that Seth? I mean it is what it is, it's huge, packed nightly with tourists and bridge and tunnel types, but the food considering the crushing volume is really solid.
being a chef for 20+ years i am in awe of this place, the volume is astounding, and Chef Ralph's quality is unmatched at this level...I really enjoy the show and your knowledge and passion is infectious
Mike Colameco's Real Food I admire how they manage to do what they do.. but I just can’t imagine the stress that kitchen is under. I worry the chef/ manager might be a dictator !
@@SethHesio uhm, they have to be. Thats what being the head chef is. If you aren't a dictator and the cooks do as they please, you will have no order in your kitchen and it will all fall apart.
