Calculating Alcohol Content Homemade Liquors and Cocktails - Formulas

  • We often see a recipe for a homemade liqueur, but we do not know the actual amount of liqueur we will get or its alcohol content
    We also happen to want to get a liqueur with a certain alcohol content but we don't know how to do it
    Let's see the various possible cases together, remembering that the calculation is not 100% accurate because many factors are involved, but very close to reality
    Definitions:
    % 1 = alcohol content of drink 1
    % 2 = alcohol content of the drink 2
    % 3 = alcohol content of the drink 3
    ...
    V1 = volume of drink 1 in milliliters (ml)
    V2 = volume of drink 2 in milliliters (ml)
    V3 = volume of drink 3 in milliliters (ml)
    ...
    % L = alcohol content of the liquor obtained
    Wz = weight of sugar in grams (g)
    First we learn to calculate the volume occupied by the dissolved sugar in a liquid, which is not equal to the volume occupied by the undissolved sugar
    Vz = volume occupied by the dissolved sugar in ml
    The volume in ml of dissolved sugar is equal to the weight of the sugar in g divided by 1.6
    Vz = Wz / 1.6
    Let's imagine we have a recipe in which there are various liqueurs and various soft drinks and a certain amount of sugar
    We want to calculate the alcohol content of our liqueur% L
    Formula 1.1:
    % L = (% 1 * V1 +% 2 * V2 + ...) / (Vtotal liquor) = (% 1 * V1 +% 2 * V2 + ...) / (V1 + V2 + ... + Wz / 1,6)
    Practical example with ingredients
    Vodka 40%: 30 ml
    Vermouth at 18%: 100 ml
    Water: 60 ml
    Tonic water: 80 ml
    Sugar: 50 g
    The alcohol content of our liqueur is:
    % L = (% 1 * V1 +% 2 * V2 + ...) / (Vtotal liquor) = (40 * 30 + 18 * 100 + 0 * 60 + 0 * 80) / (30 + 100 + 60 + 80 + 50 / 1.6) = 10%
    The volume of our liqueur is the sum of the volumes of alcoholic and non-alcoholic beverages and dissolved sugar: 30 + 100 + 60 + 80 + 50 / 1.6 = 301 ml
    Now let's imagine starting from an alcoholic drink (for example alcohol and / or vodka) and we want to obtain a liqueur with a certain alcohol content; we want to know how many milliliters of soft drink (for example water and / or fruit juice) we need to add to the milliliters of alcoholic drink
    % L is the alcohol content of the liqueur we want to obtain
    % a is the alcohol content of the starting alcoholic beverage
    Va is the starting quantity of alcoholic beverage in milliliters (ml)
    Vb is the amount of soft drink that we must add in milliliters (ml)
    Formula 1.2:
    Vb = (% a-% L) * Va / (% L)
    Practical example with ingredients
    95% alcohol: 1000 ml
    We want to get a liqueur with 40% alcohol content so we need to add a soft drink (for example water and / or fruit juice)
    Vb = (% a-% L) * Va / (% L) = (95-40) * 1000/40 = 1375 ml
    The total volume of the liqueur is 1000 + 1375 = 2375 ml
    Considerations:
    If the alcoholic beverage is made up of several liqueurs, its volume and alcohol content are calculated with the formula 1.1
    At this point we decide the starting quantity of alcoholic beverage
    If we want to add sugar in addition to the non-alcoholic drink, we decide how much sugar to add according to our taste to the non-alcoholic part (taking into account that it must also serve to sweeten the alcoholic part), and we will obtain the non-alcoholic part that will have its volume
    We add as much non-alcoholic part to the alcoholic part as is needed to obtain the desired alcohol content of our liqueur
    Obviously the alcohol percentage of cocktails drops if ice is added, which must be calculated as the non-alcoholic part

      Sono io che ringrazio te del commento. Se ti interessa sul canale ci sono alcuni liquori, e ora sto cercando di costruire un distillatore in modo che tutti poi potranno farsi un buon liquore in casa a partire da zero

    Buon giorno, ottima spiegazione, ho però un dubbio: lo zucchero come viene calcolato?
    Oltre al volume che aggiunge alla soluzione immagino la quantità debba essere calcolato in base alla dolcezza che aggiunge, ma come calcolarla?
    Si va a gusto?
    Sempre nelle dosi di zucchero devo calcolare anche un aumento della gradazione alcolica in fase fermentativa?

      Buongiorno e grazie a te. Purtroppo sono fuori e non ho modo ora di rivedere la formula, ma posso sicuramente confermare quello che hai scritto cioè che la quantità di zucchero di aggiunge in base al gusto e il suo volume quando è sciolto è peso in grammi diviso 1,6. Per quanto riguarda la gradazione lo zucchero non influisce, siccome nin ci sono lieviti aggiungi lo zucchero addolcisce il cocktail / liquore ma non cambia la gradazione alcolica. Spero di essere stato utile 😊

    Nel caso di un liquore... ho un liquore già pronto, dolce del 40%... dove si aggiunge dello zucchero o del miele, e si lascia in infusione anche della frutta e/o del cioccolato, come si misura la gradazione alcolica?

      Se aggiungi zucchero aumenti la parte analcolica di peso zucchero /1,6, se miele del suo volume, idem cioccolato. Fritta in infusione devo trascurare altrimenti fare test di laboratorio
