Hiya Kerry.....for buttercream you have to use real butter and whisk it until it goes lighter in colour....it must be at room temperature......however much butter you use you then add double the amount of icing sugar....so 200g butter means 400g of icing sugar and add icing sugar half at a time and not all at once....hope this helps xx
Hi Kerry, I make a lot of cakes and this is my recipe, 250grms block butter 500grms icing sugar,cream butter until light and fluffy add icing sugar and beat it in until smooth, you may need to add a little milk or in your case lemon juice, the lemon juice probably made it go runny so just add a little bit at a time hopefully this helps x

I use Philadelphia cheese and icing sugar mixed for my carrot cake , I was told this from a chef in many years ago in a 504 star hotel where the carrot cake was to die for, thanks for sharing today . On the same basis have you tried either beetroot or courgette . Both lovely eith sane topping. The courgette is nice with advacardo. If you cut your top out cake upside down and you will then have a flat top. And the cut piece will be at the bottom , , not telling you what to do just my suggestion Kerry . You of course what you want it’s your cake , hehe looked nice anyway .🤣 hehe you had done it anyway . I would have just added a bit more icing sugar , a soft butter / marg keeps it from being firming I think as well plus the orange juice,

I have a buttercream recipe which is used in bakerys and never fails, it is 150g block butter, 340g icing sugar. vanilla extract and up to 4 tbsp of cold milk. Cream the butter until it is light and fluffy, add the icing sugar a little at a time, add vanilla then up to 4 tbsp of milk[ 1 spoonful at a time] until a piping consistency. I only know Carrot cake with cream cheese frosting and veggie oil in the mix...a recipe from an American friend late eighties.There are so many versions out there these days.I may enjoy butter cream for a change.Thank you xx
I use cream cheese frosting on my carrot cake but to get a nice consistency for piped buttercream then add at least 2 and a half to 3 times the quantity of icing sugar to butter. You can add some cornflower to the runny buttercream to stiffen it up if that's any help. Happy baking 🙂

The cakes look great Kerry,I used to make custard creams a lot 30 years ago as my Daughter Claire loved them but when I made my butter icing for the middle whatever weight of icing sugar I had I used half that in room temperature butter and I used a hand mixer to give it a good mix,I never used any liquid at all and it always came out nice and stiff for spreading,another really enjoyable video flower Xx

There`s a lot of suggested cream reciepes, so i`m gonna try 1 of them, thankyou all. I think all good things come in small packages, so size is just a number. I can tell that your enjoying what you have made, cause your video speed goe`s "Manic" and those enjoyable noise`s "Pricless" keep up the good work,
I do a carrot cake in a non fancy airfryer from a recipe I found googling. I find any cakes I airfry are more successful using a ring tin. The middle cooks whereas in a normal tin it means the outer can tend to overcook before the middle is done.
Looks a yummy cake, haven’t made one for ages, must make a change and do one. I make a boiled pineapple fruit cake every fortnight, freeze half and it lasts us a couple of weeks 😊 As everyone has said it’s usually half butter to amount of icing sugar and add any liquid in very small amounts, maybe just zest would give the flavour 🤔 Love your vlogs watching whilst it’s 37 degrees outside 😱
Hi Kerry, nice recipe and I agree with your mistake about halving the mixture but why didn’t you put the other half on top to make a cake sandwich then dust the top which sugar ? Worthwhile trying in the air fryer tho ❤
Hi kerry I always had the same problem with runny butter cream every time,so I found block margarine is the answer as it will set harder,you just use the same recipe.😊
BUTTERCREAM: 3oz butter (I always use stork margerine), 5oz icing sugar, 1-2 tbsp milk, just put the ingredients into an electric whisker and whisk it for 4 minutes - perfect every time x

Suggestion soak sultanas in orange juice, I always like to soak dried fruit for softer texture 😊
