I think it is primarily due to the fact that Mughal invaders plundered North and West taking away most of the valuables and wealth of the region. Therefore they people of the region did not have much gold left. But as you went South the Mughal invaders could not control the region. Every Mughal Emperor from Akbar to Aurangzeb found it challenging to control South probably because it was far from Delhi. Same for British. Remember the Nizam of Hyderabad was the only Kingdom in India which managed to hold on to its jewels. Other than that the British stripped almost everybody.
Plus the only place that Gold was mined in India was in South. The Deccan gold mines and the Kolar region in Karnataka. So gold was always more accessible to South Indians than North Indians. And became a more integral part of southern culture.
