    Ingredients:
    · 1 cup wash urad dal
    · 1teaspoon salt
    · 1/4 teaspoon turmeric
    · 1 teaspoon finely shredded ginger
    · 2 cups water
    · 1/4 teaspoon garam masala
    · 1/2 teaspoon of mango powder (amchoor)
    For Seasoning
    · 3 tablespoons clarified butter or ghee
    · 1/2 teaspoon cumin seeds (jeera)
    · 1/8 teaspoon asafetida (hing)
    · 1 green chili split
    · 1 tablespoon ginger thinly sliced
    · 1/2 teaspoon red pepper adjust to taste
    · 4 pieces of lemon for garnishing

      Just boil the urad dal for about 25 minutes until they're soft.

      You do not need a pressure cooker. In fact, the high heat kills vitamins. Slow cook dal for a couple of hours, or medium heat for an hour. Any saucepan will do. Dal always boils over, so be sure to remove the scum with a spoon, ensure there is enough water, high walls for pan, bring to boil, then simmer slowly. Soak overnight prior to cooking for faster cooking. Urad dal cooks fairly fast by comparison to other dals.

    Thank you for the recipe Manjula. I just bought some Urad Dal and want to try it for the first time. The problem will be finding amchoor and hing. One question about the pressure cooker. I'm using the Instant Pot, rather than a stove top pressure cooker. Do you just bring it to pressure and then take off the heat and let it naturally release? You don't leave it cooking under pressure at all? In other words, would it work to set the Instant Pot for zero minutes?

      you can skip the asafetida and use lemon juice, for pressure cooker use instant pot just like you will use the pressure cooker , cook for four minutes instead of five minutes set instant post on low setting

    I'm confused about urad dal.. I'm hoping to make Vermicelli Upma which calls for it. I have green lentils and black (whole) lentils and orange split peas. The split peas LOOK like what is being used but nothing else does. I want it to be authentic but need to make this dish today. What should use?

    Can someone please tell me, when I boil whole urad there are always a few that do not boil and are rock hard. How do you pick these out? Either before or after boiling?

    Tarka should have simmered in dal for a couple of minutes to blend flavors, cook the chilies and the ginger. What happened to the chopped ginger? You had ginger in two bowls, long slivers, and finely chopped. Chopped one got left out. Also did not see haldi (turmeric) being added.

      The turmeric went into the pressure cooker with the chopped ginger (1:53) and cooked with the dal; the julienned ginger went into the tarka at 3:43.
