Very thorough review. One thing to add about the two Shimano shoes: The RC903 Boas are hard plastic while the RC703 Boas have a rubberized edge which in my opinion makes them easier to grip.
The shimano shoes do have a wide version which is a huge plus. Only negative I have is that stiff tongue edge. The first few rides you will have red marks where it comes into contact with your sock but it goes away eventually.

Shimano are durable, i have a Shimano First Gen rc5 until now no sole separation. And i do daily ride and i do gravel race
I like the "RC" line too but the RC7 is too close in price to a discounted Sphyre. They should review their price strategy for the RC3,RC5 and RC7.
