Considering the amount of items you freeze dried at once, and especially with how wet they were, the amount of time you freeze dried was pretty short.

Yes, your explanation was really good! The frozen food goes from ice to water vapor. The reason that the vacuum is needed is to lower the boiling point of water, so it just evaporates! (At least I think that’s what I learned in my food science lab 3 weeks ago). That’s what allows most of the shape/color of the food to be the same (rather than oven dried where things turn brown). And the reason a lot of things expanded was the trapped air inside the candy expanding in the vacuum! SCIENCE! In the lab we freeze dried food samples and are analyzing them all semester to compare the food to the nutrition label
And tacky foods may be from leaving the food out as the food will rehydrate from the water in the air. In the lab we use a desiccator to keep foods dry (like those silica beads in foods that say “do not eat”
I make strawberry frosting using freeze dried strawberries that have been crushed up in a blender. Learning about that method has been a game changer. I believe you can buy powdered freeze dried fruit also.
