    here in Denmark we also use the green part of a leek, we slice it very finely across the length of the leek so that the coarse fiber threads are easier to digest and it doesn't feel like eating food with sewing threads in it 😂 We sauté all the greens and use them as filling in e.g. food for you and garnish on potato soup together with diced bacon so we could be more economy proven with our diet Budget and not look so much. I learned all this at household school. It is a board school where girls and boys learn to run a household. Economically and sustainably correct.

      Here in Germany, we also use the green part. We usually plant our leeks in trenches, so that the white part is longer than his. That's how you get leeks that look like store bought ones, where you have like a foot long white part and then green on top. We actually hate it when they cut most of the green part off, which they usually only do at certain times of the year. Possibly because it doesn't look as nice anymore. We cut the leeks into rings and then use those in soups. The green part gives creamy soups a nice green color which we like. And you can't really taste a difference between the green and white parts in a more chunky soup. I think in the US, you use carrots, onions and celery as a base for a lot of soups. We use carrots, leeks and celeriac instead. I also use the whole leek in pasta dishes and other things. I've never cut off the green parts - with the exception of any damaged parts.

    I'm in 5b, coastal Maine. I get into the low tunnel side wall, peel back the row cover and gently loosen the soil next to the carrots (late Dec, Jan. and Feb.), and pull out baby-ish carrots that are so sweet, it makes you think you are sucking on a mouth full of carrot flavored sugar. Then the flavor almost disappears and you have to actually chew the carrot.

    So great! One probiotic recipe you might like for family: with a potato peeler or mandolin FINELY slice a cabbage head and a few carrots. In a large bowl mix with salt and some bay leaves and pepper corns. Stuff with your fist tightly up to the top into a large mason jar making sure that contents are covered in its own liquid and close lid. Leave on countertop. Burp often as bubbles form. In 3 days you will have a delicious naturally fermented sauerkraut! To stop further fermentation place in fridge. You can do this with almost all of your wonderful veggies!

      I use them as mulch, but I have so many leeks right now I can afford to do it. Leeks grow like weeds.

      They're tough to get started. it's really important to overseed them, because the germination rates are really poor.

    I put together a walk in hoop house one late fall it's been -30 below an still have greens . I use 2 layers of plastic seal tight use a construction zipper for a door an usually most things survivability it warms up

    You are such a helpful wonder! North Central FL here, can get real cold then real warm without much notice. Wish I had some greens to winter over but I dropped out gardening because of excessive loss via insects. Thanx for your spirit, intellect and relentless devotion to the wonder of growing.

    Great video! My husband was a kid, his mom used to make their family "Leek Loraine", which is a quiche dish. The funny part is, he and his sister, to this day, still hate onions and onion flavored anything. This sucks for me, because I love onions and all onion things.

    As a new grower, trying to be more self sufficient in Florida where (most) of our grocery store produce is so chemical ridden… I love your videos!! I just started seeds per instructions in one of your videos and my seeds have germinated in about 5 days!!
    I am wondering if I can start my carrot seeds now in Florida outside even though on the almanac website it suggests to start them Feb 2-16… but this video says NOW, so is it possible to do both?

    I would love to see some vids on how to harvest, lettuce as said cut & come again, vs whole head. Will the root come back if you take a whole head?
    ALSO love to see how to harvest perennial kale, when/how do you cut the stalk back?
    Will it leaf out all up the stalk?
    How do I make it do that? Cut the head off and try to root that for a new plant?
    FYI, I bought Kosmic kale, but don't really know how to manage / harvest it properly.

      You can use the green part too. That's what we do and what my grandparents have always done. You can also grow them in trenches, so that the white part is longer (like a foot maybe) and you have more of an even split between white part and green part, and not mostly green and just a bit of white. Also, where Americans tend to use onions (and carrots and celery) as the base for a lot of soups, we use leeks instead.

      They're so easy to grow that you have nothing to lose. They are, literally, the *easiest* thing I grow and they take up almost no space.

    I harvest the entire leek and dehydrate them and you can vacuum seal in jars or powder for long term storage

    Kale is so tough. Here in Boston there is still Kale growing strong outside with no cold protection. Although the cold coming in will probably finally get to it.

      Very impressive! If you stay out of the single digits, I bet the kale still makes it. It may get burnt some, but I wouldn't be surprised if it regrew later.

      @@TheMillennialGardener you were spot on. Update-some Kale in community gardens made in through our Boston winter with no cold protection. Now it was a mild winter here as the ocean kept us warmer, but we still had a few nights in the low teens and about 10 inches of snow. The Kale is growing again and looks ready for anohter season.

    just out of curiosity why do you not use the leaves? they are very flavorful. We chop up the leaves and use in stir fries and in soups and stews, and we also chop them up and freeze them to have for soups in the winter, and you can dehydrate them and then powder them to put into sauces and more.

    If you remove every leaf from a kale plant, new leaves will come back? Will the new leaves come back at the top of the main stem? Or is there a way to prune it so it bushes out? Thank you again for sharing your knowledge

    hi MG, i grew somered leaf lettuce last year and it did very well. i was very busy last year so i was not really able to monitor it when it had grown but it seemed to wilt and bad fairly quickly if i did not pick it. am i wrong?

    My dwarf blue curly Kale is still growing great, but it's inedible because it's completely infested with whitefly. I don't even want to cut it and bring it inside to clean it because I'll miss some and I'll have them in my house for the rest of the winter

      I would recommend a couple treatments with pyrethrin. Spray with pyrethrin, wait 24 hours, hose off the dead bodies, treat again in a week, hose them off. In the meantime, keep the kale covered with insect netting between treatments so no new insects can access it.

      @@mikel646 I try to reply as much as possible. Pyrethrin will make short work of whiteflies, but you need repeat treatments to kill the next "bloom" and keep the plants covered so more eggs cannot be laid. Pyrethrin is very powerful, but it degrades in less than a day, so its protection wears off quickly.

      @@TheMillennialGardener I'm glad you mentioned that. The only pyrethroid I'm familiar with is a synthetic one (used in the pesticide Tempo SC Ultra...which works really well and is quite safe in homes around kitchens and pets) but it lasts for weeks or months.

      That may be worth a gamble, but I'm stuck on the e.share brand. It's so much more well made than the others I've seen. I always have the e.share one on my list and I get some when it goes on a sale. It's worth paying a few extra dollars for, in my opinion.

    My carrots germinated fine but were stunted. Some put up good greenery; others didn't even do that. I'm sad since we're actually getting a good freeze, and I was wanting to d a taste test comparison.

      I would wait until this brutal cold passes you, then sow them. In another week or so things should moderate your way a bit (unless a second cold plunge comes). The problem is a hard frost will heave the ground, which messes up the rows. I like to wait until a mild stretch to sow the seeds.

      They're made out of 2x8's, which are 7.25 inches nominal. That is their height.

    Is there still time to start these veggies? My issue with these types of videos is that we see "hey guys look at my veggies I started 4-6 weeks ago. hope you did too cause it's a bit late now." and it's like well, as a complete newby gardener I didn't know I was suppose to start this and that weeks ago, that's why I came to the video. Maybe it's because I'm in SoCal and my last frost date is Jan 25 so our winter is almost done while you're still midwinter, but it does feel like we get these how to/what to plant now videos too late.
    P.S. this was more a general rant about youtubers not millenial gardener specifically.

      That depends how bad your temps are going to be. My forecast is 18, so I would not cover garlic and well established carrots at that temp. Green onions and freshly germinated carrots, probably. If you're going to be colder than that, I would consider covering everything or burying them in wheat straw or chopped leaves for the time being, then uncovering them later.

      Dale is also a foxhound. They get used to it. Dale gets really cold in winter, so we always keep him in sweaters this time of year. The first few times, he wasn't a fan, but now he literally runs to the closet for something warm this time of year.

    Excellent video - thank you!! I definitely am going to give the blue curly kale a try. Great tip on cutting back Dino leaves at the end of summer. I couldn't figure out why I was battling so many aphid pests at the end of last season - very frustrating and gross. My plants are quite large and didn't want to chop them or dig them out.

      You could either pull them apart and shove each plant into the ground or thin them to a single leek and transplant them as a cell.

    Call me lazy but I only use pelleted carrot seeds now. Space 1" apart and thin every other one for bigger carrots, or leave them for baby carrots.

      I buy carrots right off the seed stands, so they're virtually never pelleted. If they were, I'd go for them. Carrots are a pain to seed, but it's well worth it once they germinate.

      It's important to grow as much as you can. If you have truly cold winters, you need a root cellar to store as much as possible.

      I encourage people to research zones that they live in and the temperature so they may be colder than their normal temperatures in order to grow foods that it might be too warm or cold to grow in.

      That depends where you live and what kind you’re growing. I plant garlic in November. They need to sit in cold soil to bulb well.

      You certainly can. The white stem is the most prized part, but the whole leek is edible. It's almost like broccoli. People usually only eat the florets and discard the stems, but you certainly can eat the stems.

    In my 11b zone most root crops( beets, radishes and carrots don't develop the root) so it's not relevant to me .1.5 hours of sun and too much warm climate don't help me with that...Nothing is easy in my life

      What you can grow in winter isn’t as vast. You’re limited. This drills down to the 5 easiest.
