As you've shown, thighs are surprisingly tricky to get the right balance, and after grilling, smoking, baking, air-frying, pan frying only to find no perfect method to get juicy, tender meat with crispy bite-through skin - I'll definitely be trying your method! I agree grilling hot and fast will crisp up the skin. It's the OG way. But I always overshoot my internal temps and the skin burns/crisps up unevenly. I can't create the best result possible. But for a quick and dirty method it works great.

Man...I really liked this experiment but the final product is tough to swallow for a family dinner night of chicken thighs. Am I reading this correctly that it can take up to 4 hours to do chicken thighs? 2-3 hours for smoking. rest 30 mins. sear 2 mins. sauce and smoke for another 30 mins. My search shall continue. Ty for your efforts good sir.

I have the simple answer, grill them over charcoal and wood chunks 😂
