Only logical thing I could think of is that they stay more in shape when cold instead of hot when smashing, but isnt the skin around it already holding it together? Why not let them steam-dry so they can also absorb more herb butter??
I went to your website to check recipe amounts. While there I tried to check out the reviews/comments. I accidentally gave it 2 stars which was not my intention at all.
I rarely comment but I make these often and they're amazing but this video has way too many unnecessary steps! The cooling down is a waste of time as is the cutting of the potatoes. What's the point when you're gonna keep cooking them in the oven?! By not cooling them off you lower the baking time! You can simply drain them and drop them on a sheet pan lined with oil and then put a chopping board on top of them and squash them all at once. It's also weirdly satisfying to do ;) Then just add oil, seasoning and just some of the butter mixture and bake them up. The butter mixture you add it once they're done for incredible flavour!
