I don't think it is necessary, but the "breading" will probably cook less even. Maybw just use so much that the complete bottom of the chicken has contact.
When you cool with alcohol it burns off so you get the flavour which really makes a difference but you don’t actually get the alcohol but obviously if you really can’t consume alcohol at all don’t use it.& no it wouldn’t affect the dish significantly
I totally save the oil for another time or use pasta, potatoes, rice or bread to soak it up. Or put flour in it to thicken it up then you have a really nice sauce. Lol

This is one of my all time favorites sans the cream sauce. I just love it as it is, or with a lemon parsley butter sauce at the max!!

Siggi M the alcohol burns off when cooking so you only get the taste in the background you can’t get drunk from it!!!

If your oil is at the right temperature, your food won't be greasy, no matter how much oil you use.

You can substitute in some more chicken broth or stock instead 🙂 It won’t be exactly the same but it’ll be good.

He would use Double cream as Single cream would split in a hot sauce

by the time you caramelised the chicken and made the sauce that chicken will be cold. stick it in a preheated oven while you cook the rest
