I tried to charge my Pixel 6a with 4 fully charged rechargeable AAs - filled 1687 of 4410 so only 40% - not as useful as a thought given its weight & size. I did do the math & 1800 mAh is the best you're gonna get if you assume 25% conversion loss...

i did do that before and use apple devices because theyr have Overvoltage protection but most phones use data pins for adaptive fast charging

For that, you need to know the mAh of phone battery and the AA cells used to charge the phone battery. There will be some transfer losses though.
Example: Assuming you are using Duracell Rechargeble AA cells, each of which hold approx. 2500 mAh charge, then using 4 such cells will give you approx. 10,000 mAh. Assuming transfer losses at 10%, you have 9,000 mAh available at your disposal. So if you have a phone battery that is 300 mAh, you should be able to charge it around 3 times.
Note 1: You need to know the mAh of the cells you would be using in the battery pack.
Note 2: The discharge-rate that the cell is able to withstand will also decide the energy available to charge the phone. Although ordinary alkaline AA cells are rated at 2850 mAh, this energy is maximally delivered only when the connected load is a low-drain device like a remote control of TV. If you were to use a high-drain load such as DC compressor motor, you would not be able to maximally harness the 2850 mAh. So how much you are able to charge the phone will depend upon how much 'load' (current) the phone is drawing.

The power that may be stored within the phone battery is already determined by the manufacturer. You cannot store more than that.
