I'm not big on cooking from scratch, so I don't bother keeping extra salt in the house. Only spices and different peppers for a bump in flavor. Every food made for even the slightest convenience already contains enough salt and fat, even when reduced: soups, sauces, snacks, condiments, canned and frozen foods, etc.
I buy low or no salt stuff so that I can control how much salt to add. I almost always add some salt, either directly or via a known salty ingredient, and can definitely tell when the food calls out for it. I'm also learning to tell when a dish tastes 'flat' and can do with more acid, sweetness or umami.

The refined version (basically just Natrium Chloride) does not have this. Make sure you include at least a little of the unrefined salt in your diet. This means that when I eat in restaurants, everything just tastes inedible due to over-saltiness. She uses diamond kosher salt which is half as salty as Morton kosher salt by volume. This is very important to note.
