Made this tonight. Exactly as explained. The dried chilies were a great addition. I used chicken thighs and cut them fairly small. This dish is glistening, loaded with flavor, and the textures are amazing. The toasted cashews put it over the top. I served this as a main dish alongside a traditionat egg-drop soup. Otherwise, I think rice would be enough to make this a full meal. Thank you, Marion, I learn so much from you.
This is a real winner. Have been playing around for a while with velveting techniques. Egg white, rice wine, soy sauce, cornflour, etc. etc. and they are all a bit of a faff. Also what method I use - passing through water or oil - the chicken tends to stick. Now I realise that none of this necessary, just simple cornflour and it works like a dream. The ingredients in this recipe are so simple but the result is a juicy and tasty dish. The sauce is also super simple and relies on store cupboard ingredients. Thank you Marion
I looked back on this video today. I made this for my wife and mother in law. I kicked it up a notch with fresh chopped Thai chilies. I also used sugar in the raw for the sauce instead of white sugar. It was a huge hit. Thanks for your great instructions.
I tried different cashew chicken recipes before and they all failed me. I need a definately successful recipe this time. I am going to try this recipe after reading your comment. Fingers crossed.

Just made this for dinner. Instead of deep frying it, it just added some oil in a large pan and stir fry the chicken. It’s such a simple recipe. The family lovedddd it. Instead of sugar, I used honey and it turned out delicious. Thanks for sharing this recipe!!!

We keep our rice cooker going for a couple days and I have recently been cooking your crispy fried egg and putting in a bowl of rice and topping it with your Coconut Sweet Chili Sauce, sesame seeds, and a sprinkle of Togarashi. One of the great things about this dish is that one could use chicken but also use either beef, pork, prawns, shrimp, tofu, etc. definitely making this. Probably with chicken and then with prawns and agedashi tofu

This is probably the best organized recipe I ever got from a TH-cam Channel. Definitely a "do-over" this was positively delicious and easy to make Prep work was minimal and thanks to my overstocked fridge and freezer during these times of isolation, I had all the ingredients in the house! I'm from Missouri in the U.S., and we have a cashew chicken at our Chinese restaurants that is called Springfield-style Cashew Chicken, referring to Springfield Missouri where a "famous" restaurant called Gee's East Wind created it. It's breaded fried chicken pieces with an oyster sauce "gravy" topped with cashews and finely diced green onions. My grandparents would come visit us and would drive through Springfield on the way. My Grandfather would always brag about eating there and would sometimes even bring the paper placemat, usually complete with a few drops of gravy, to wave in our faces! Alas, Gee's is no more, but Springfield-style can be seen on menu's across the state. Thanks, Marion, for another awesome video!

I always look for the dried chillis in Kai Phad Met Mamuang when I’m eating in a Thai restaurant - when they’re in there they make such a huge difference, so to my mind, not optional at all!...thanks Marion this is my new stock recipe for home cooking 😋

Pineapple would be a welcome addition. It needs that. I used one bell pepper and added an organic zucchini, diced, because I had been craving Kung Pao. Very flexible dish, and tastes like take-out.
