Recipe: Servings: 2-3 Ingredients: 225 g (9 oz) Gnocchi 15-20 garlic cloves 3 tbsp olive oil 1 fresno pepper - chopped 10-15 cherry tomatoes ¾ cup diced tomatoes 1 teaspoon honey ¾ cup heavy cream (or coconut milk) ½ cup fresh basil - chopped Parmigiano Reggiano Salt and black pepper Instructions: 1. Cook the gnocchi according to the instructions on the package. Drain and set it aside. 2. In a large skillet, heat 3 tbsp of olive oil over medium heat. Add the garlic cloves and cook for 30-60 seconds until fragrant. 3. Add the chopped fresno pepper and sauté for 1-2 minutes or until softened. 4. Add the cherry tomatoes, a pinch of salt, and black pepper to the skillet and sauté for another 2 minutes or until the tomatoes are softened. 5. Add diced tomatoes and honey to the skillet and stir well. 6. Pour in the heavy cream (or coconut milk) and bring the mixture to a simmer. Allow it to cook for 5-7 minutes, stirring occasionally, until the sauce has thickened. 7. Taste the dish and add salt and black pepper, if needed. 8. Add the cooked gnocchi to the skillet and toss with the sauce until everything is well combined. 9. Add chopped fresh basil and grated Parmigiano Reggiano and mix. Leave some basil and Parmigiano Reggiano to top the dish before serving. 10. Finally, sprinkle the remaining chopped fresh basil and grated Parmigiano Reggiano over the top of the dish before serving.
I just made this. It was soooooo good. I modified it a bit to suit the ingredients I have at home. I just used red bell peppers (instead of the indicated peppers), and used Spanish paprika, chili powder, and dried basil as the spices. I didn't have fresh basic to garnish it with later, but it was still super yummy! 😋 (Edited to add: I also don't have cherry tomatoes where I live so I just chopped some tomatoes, and I chopped the garlic!)

Yeah I made it and it was a bit odd trying to tell the difference between a piece of gnocchi and a large clove of garlic. Chopping it down finely would be a bit better for my personal taste

Seems like the influencer gnocchi is just browned butter and herb gnocchi, but I love it this way. I make marinara with canned san marzanos, then brown a little ground meat a long with the gnocchi (gotta get them crispy!), then add in the sauce and serve with burrata. It is one of my absolute favorite dishes and is quite quick and easy if you prep your base ingredients ahead of time.
