After 60k miles be sure forks need at least new oil.
You will notice improvement at handling
Love seeing this bike getting restored, as a rider of an 600 hornet myself I hope you can film the actual valve adjusments even if you don't do them yourselfs and really like hearing details from the build in general :)
It is Not that hard, ive done it myself a few times. It just Need a little Bit time and patience.

I had one of these 2004 hornet 599 carbed 4-cyl only around 97 hp but man it was fun in the twisties and doing clutch up wheelies lol.

I have a 05 900f hornet with 36000kms that i had since new and only getting rid of due to upgrading to a 899 Panigale. Always wished the cb was more exciting but had a lot of fun on it anyway.

No! Do not soak in vinegar! Replace with stainless because vinegar eats away material.
Next time take the rider footpegs off and put them on upside-down. Then put car jack stands under them to hold the bike up. That and head lift front stand will give you a very stable bike you can take both wheels, swing arm, forks etc. off without it falling off a swing arm stand like that bike did.
