Can we prep the white sauce beforehand and store it for future uses? Like if you make one large batch and keep it in the fridge, will it still be good? How long will it last?

Abigail Graham I would just make it fresh everytime as its not hard to make. If you really want to make a large batch then use it within a week.

Hey there. I think what you smell is turmeric powder that was added in rice to give them the yellow color. But its optional, you dont have to add that if you dont want to. Thanks for watching!

Curry is actually a mix of turmeric among other things!

if we dont put the turmeric powder will it affect the taste and is it a must to put food colouring?

Nice recipe but I think for the chicken they use oregano, coriander, lemon juice and olive oil as I didn't taste other spices and also it's not red like Tandoori chicken. But the rice is spot on with the exception of chicken broth instead of water, I believe.

Hi Ray. Thanks for watching! Most of the carts in NYC I have eaten from have red chicken as they add some color to it. The one on 53 + 6th ave, their chicken is white as they don't add color and honestly I dont even like their stuff anymore but they used to be good before. Regarding rice, yes, you can add chicken stock if you like. Overall, its better to marinate the chicken over night and then cook it with green peppers and onions :)

I can also vouch for the red food coloring found in a lot of halal carts in the city. Over the years I tried many carts ranging from mediocre to great. Most of them, it seems, go for a flavor similar to what you find in the midtown carts popularized by the halal guys which to me just tastes like curry chicken. My favorite is a cart in Brooklyn on Flushing and Broadway, right by the Woodhull hospital. The chicken had a red colored yogurt marinade much like this recipe. For what it's worth, I think the guys who run this cart are Moroccan. Anyway, thanks for the recipe, I look forward to giving it a shot.

Shouldn't be necessary. You could use the vegetable oil also.

Taimoor Johnson olive oil is healthier. Otherwise, use avacado oil

I guess. The ones you buy, you don’t know how much salt they put in our if they’re clean. This will likely taste better than what you usually get, is cheaper, and cleaner.
