    I am a mental health therapist. One of the key reasons motorcycling has positive cognitive effects is due to "bilateral stimulation". We use BLS in EMDR therapy to see huge results in treating trauma.

    Riding is meditation. Meditation is not relaxation technique its focus exercise. It allows your mind to focus on one task over prolong period of time. Allowing your mind to enter state of "flow", especially if this task is repeated.

    I think it's the sum of a lot of things combined that makes so therapeutic. Like many outdoor recreational sports you kind of forget your societal/personal life and just do the sport, all your thoughts are as you mentioned on the single performance. And to add on to what you said about the sunlight, I think the fresh air is definitely helping too. Research has shown that O2 rich air has many health benefits both for the body and brain, Inside we don't get that. Lastly the adrenaline rush makes you more relaxed afterwards, as how your dad mentioned it can be exhausting but in a good way. After a good ride (or outdoor sport performance) you feel relaxed yet energized, accomplished and refreshed. This all plus hundreds of other small things added up like enjoying the view and seeing nature. There is so much about it that can be experienced as therapeutic.

    Not everyone will get how OCD you are about adjusting the mirrors.
