Tip: don't crouch against paul unless you're very low on health and have to guess.
when you think he's about to do a linear move like deathfist side step or side walk to either side. Prefer stepping to the right as df2 can catch if you stepped to the left
, do keep out moves when he's coming at preferably with a fast mid.
One backdash can avoid getting knocked down by his demo man most of the times.
Get away from the wall as soon as possible against paul, if you have a throw that switches sides on break do it.
But most importantly of your character has a long range launcher or a move and can punish the deathfist or demoman, then do it.
