    What is undesirable about the rootlet that it must be polished off?

      Hi Kneenibble,
      they are bitter and rich in proteins. They would give the beer a protein, astringent bitterness. They have low or no starch contained, which is needed to produce a beer!
      That’s why Weyermann® cleans all its malts to deliver always highest quality malts for great-tasting beers!
